Speciality Cocktail Menu Sucks

I work at a busy “fine dining” restaurant that has an outdoor bar for the summer and an indoor bar. Very busy during the spring/summer months. After taxes my paychecks are about $1400 USD per week (house pool)

But man the speciality drink menu sucks. It’s a seafood restaurant and people seem happy with the food. The specialty drinks are just juicy unimaginative slop. 1.5 tequila, 1.5 grapefruit, 1 blood orange, 1 lime, .75 agave. 1.5 mezcal, .75 yuzu, 1 mandarin, .75 lemon, .75 agave. Etc, etc, etc. No delicately balanced drinks, no amaros, just juicy slop. It’s become demoralizing making this garbage every night. We did 300 covers last night. Service bar was busy.

Customers come in and I try to encourage them to expand their horizons with something off-menu from me or at least a classic cocktail. They never want to take a chance on something unknown.

The vast majority of people ordering martinis are clowns. It’s all dry dirty vodka martinis.

People compliment my classics, but idk. It’s nice making money but sucks just not being able to sell good drinks. Years ago I worked in the city at a cocktail bar and our speciality drinks had some real substance to them. Our vermouths are cheap shit that we dont refrigerate so it gets worse quickly. I cringe with every Manhattan.

I made a Breakfast Bell cocktail I saw Barfly make and it was great. Nuanced flavor and texture. The bartenders loved it. I brought it to the managers to try and they just couldn’t appreciate it. But that drink wouldn’t even be feasible for a busy dinner rush here. Takes to long to firm up in the freezer.

Electrician vs Ironworker

I am applying to both locals. I have some experience with electrical from 8+ years ago. I worked for a union electrical contractor that in hindsight used me as a scab because he underbid jobs. I was in my early 20s and didn’t know any better. I pulled a lot of data wire, flexcon, hung lights, etc. Over the years I did a few small projects for friends. But I never loved it. It was alright. For past 8 years I have been in a different field. Now I am applying to both locals and think I have a pretty good chance at being accepted to both. I don’t know much about ironwork. What are the key differences in terms of quality of life and pay? I assume electrical has a good longterm outlook with the way tech is going. Ironwork is still dependent on buildings being built.

I Walked Away

So I think a lot of us know that sometimes you see the table and how the vibe is and know you should just walk away. Saturday night I walked into a packed casino which is my favorite time to play craps. Table was shoulder-to-shoulder. A spot finally opened up and I got in. I asked a regular how the table was and he said “suck!” Two quick big reds for the last two shooters. Then the crowd started thinning as the crew reset the table and I looked around. The few people there weren’t smiling, looked like they weren’t having a good time. So I immediately walked away. Felt good listening to my own advice for once. Went and played some blackjack

Apprenticeship

Hi, I am attending an orientation/interview. Assuming I pass the exam and agility test and am offered a spot, I am concerned about the compensation as an apprentice. Restarting in my early 30s after being barred from my previous profession due to politics and subsequent bureaucratic ruling. I am currently bartending and making $1k+ net weekly. I understand the apprenticeship is an investment in yourself, but will I be making a comparable salary in my first couple years as an apprentice? Will I be available to bartend on weekends? I really can’t afford to be making less than I am currently.

So I think I know the answer, but let’s open it up to the horde. Will the two plants on either side catch up enough to flip with the middle plant? They got transplanted last week and are starting to take off, but the middle will be ready to flip soon. I have another 8’x4’x2’ tent that I will be transferring to

I hit the king’s bounty (almost)

Was down bad at the table after some big swings. Placed $5 on the side bet for maybe the 3-4 time in a few shoes. I was dealt two kings of spades and didn’t even realize it. Dealer stops and points in excitement. Her boss comes over and he realizes her up card is an ace. He gets nervous and calls his boss. 1000-1 payout if she has 21 with my kings. Nobody home. She flips and it’s a fucking 9. Still a 100-1 payout for me.

Went back tonight on a hot streak the past week or two. Got fuckin rinsed. Nothing was hitting. Stupid amount of 7s. Light crowd but two guys playing with a lot of money. Old chinese guy with $20k in chips laughed when I crapped out with my last $100. Walked away feeling nauseous. Stopped at blackjack table and was makin a few bucks then was down bad there too after they switched dealers a few times. Then I hit a 100 to 1 side bet and missed out on the 1000 to 1 side bet by 1 (dealer had 20, needed 21)

Still walked out -$600 but a stomachable loss if viewed in aggregate of what I have won past couple weeks

Saturday night table had a decent crowd. $25 min. Bought in for $400 and was quickly up. This regular was at the opposite end and she never shoots. I took my bets down and let the last shooter after her roll. He had a decent roll but Big Red came. Table reset and I lost some money on the first shooter. Was probably up to almost $800 but wanted to wait my turn. Guy before me had a pretty good roll and refused to roll any field numbers because this fuckin guy kept buying in for more chips mid roll. My roll comes and I hit a 7 on the come out. Had a long roll after that hitting a lot of 3s n 5s. I think I made 3 points. I didn’t wanna color up before the guy to my left shot because we had a fun corner the past 45 min. Played conservatively and probably lost out on some good potential winnings but then he crapped out twice on come outs. Table had thinned out and I left. Probably at the table for a little more than an hour.

$400 in $437 out Resorts World Catskills

Walked in around 6pm on Memorial Day to a casino that had much less of a crowd than I expected. This dorky guy working the gate immediately pissed me off by asking me if I thought I was gonna win and then asking my girlfriend if she was “going to cover his losses if he loses?” Why the fuck would you greet people with that energy?

One table open and it only had a few people. I walked up to a wide open corner and accidentally became the shooter. Played the pass line with max odds. Had a long roll, hit a couple points before 7 out. Table had emptied out and it was just me and my girl. Crew was very cool and let her roll and encouraged her and assured her it was fine that she didn’t know what to do because it was literally just us. She made me a few bucks and left to get a drink. A couple people joined the table including one annoying fuck who was asking lots of questions and saying 7 a lot. I was up and down playing the pass with max odds. Annoying guy’s turn to shoot and I actually figured he might have beginner’s luck, but he hit a 7 quick. I was down to maybe $150 and kinda tight about it. I put $25 on pass and max odds (5x) when the point was 9. Bought the 9 with remaining chips. Point hit and I was back in the mix. At one point in the game I was probably at $600 but got back down to around $400. The annoying guy from earlier started arguing with the crew about some stupid horn bet and I immediately grabbed my chips n left. 45 minutes of play and left with $437 minus tip. Honestly a win is a win.
