how to get more experience and get closer to professional jobs, I'm... very lost.

I'm not here to vent so I'll keep the background short. I've wanted to open my own studio for years, and the original plan was to go to college and get a degree first. I hadn't thought farther than that because I figured I'd learn and plan more there. Long story short that fell through, so I started working on becoming commisions based and I've learned a lot catered to that. But that only works as a freelance artist. So I decided I needed to stop being afraid and try to jump in. But now I'm MORE afraid becasuse I don't have a degree, I've never worked, and my website is built on the fact that I have a unique style because that's what commisioners want.

I've gone on casting call club applying to everything I can because while they are still freelance jobs technically, I thought it could showcase more of my ability to animate when hired on to other people's projects. And I thought I'd be more easily "hired" (90% of the listings on there are unpaid or deffered payment where I don't really expect to be paid.) since most, I'll be honest, are started by small teams with even less experience than me. However, I've found the leadership on these projects is very unprofessional, I'm unsure whether to keep pursuing these projects, in case they might make me worse off for being so mismanaged that they collapse or read badly on me.
I don't really know where to go from here. I feel like no one will take me seriously if I keep going as is, I need help figuring out what to do and where to go, any possibilities or tips or personal experience helps. I have a lot of free time where I'm at however difficult it is and I feel I could do anything right now if I just knew where to start.

Question for specifically Taiwanese and Japanese on "melding(?)" of asian cultures in the public view for an oc

I ask a lot of questions on reddit about culture when it comes to OCs because as another minority I understand how little things affect the bigger ones, and since I've been working on a series of chatacters based off of their own dessert, animal, and aesthetic, I REALLY wanted to do oke based on brown sugar boba, and since boba is taiwanese, I chose a formosan sika deer which worked perfect for the pearls. The problem came when selecting an aesthetic. I found kawaii, specifically the subsect yume kawaii, and thought it was PERFECT for her, but I also have heard and understand that the way westerners often lump east asian cultures together like they're one thing, and kawaii is of course, japanese. It could be a not big deal considering that aesthetics are kind of a globally partaking thing, but it's important to me to ask. I know I would be upset if someone were to try to conflate say, mexican (what I am) and Cuban or like Bolivian, we're very different, but also aesthetics may be a different story, I don't really know of any based off of latin styles.

Favorite unique or recognized sweets?

I don't think this post breaks any rules, it may be a little off topic but I am still asking to discuss favorite recipes so I hope it can stay. I'm doing a little art thing but unfortunately I am not very creative (or perhaps I just have bad memory) I'm looking for the most iconic or unique looking sweets you can think of. I'm designing some sweet treat inspired animal chatacters, think strawberry shortcake esque but more visibly inspired by their respective treat and I'm open to all kinds of ideas, I'm especially partial to cavelier king charles spaniel, a ballet themed mouse, and a snail so I'd really appreciate anything for those as well!
