Tri tip chicharrones

Haven’t cooked many tri tips and never cooked one with this large of a fat cap.

Whole tri tip was 4.5lbs. Cut it in half where the grain changes.

Turned out to be amazing, should’ve crisped the top more

Reverse seared 275F until internal reached 115f. Rested before searing for 15 minutes.

Meat was very tender and flavorful.

Frank Ranalli’s

Pep slice from Frank Ranalli’s in Kensington.

$5.50 plus tax I believe, pretty small slice.

Very good slice, never heard of this spot before. Fresca is right up the street so that’s also a huge bonus.
