Adventures in smoked Salmon. Miso marinade edition

6 tablespoons miso paste (I used red)

1/2 cup rice wine vinegar

1/8 cup sugar (I used monk fruit alternative)

2 tablespoon brown sugar (I used golden monk fruit alternative)

2 tablespoon minced ginger

2 tablespoon minced garlic

4 teaspoons soy sauce

2 teaspoon toasted sesame oil

Combine and split in half. Put half on salmon and refrigerate (4-24 hours). Save other half to brush during cook (brushing every 30 or so minutes). Cook is about 2-3 hours at 225-275 (internal around 145-155)

Smoked crispy skinned chicken quarters. kettle play by play

Ok this is my method for crispy skins.

Morning of cook, pat dry, dry brine 1/2 tsp kosher salt and 1/4 tsp baking powder per pound. Put in fridge uncovered. Get grill going about 2 hours before dinner. Separated 2 zone. Get hot zone piping hot (about 1 hour of warming, pink flames rising from grate). While grill is getting hot, get quarters out of fridge. Coat with EVOO binder (I used chili EVOO). Then put cracked black pepper all over. I then took a probe and poked a bunch of holes all over thru the skin. Once entire hot zone is white hot and I see pink flames rising (about 1 hour), put some wood chunk on the hot side (I used cherry) and put quarters on the indirect side skin up. put lid on and open vents all the way. I coast around 350-375 for about an hour. Then towards the end, open lid, check internal temp and probe tenderness (and crisp). aiming for 190-195. Then leave the lid open and get the grill piping hot again and once I see flames, close lid. Sear at around 375-400 for about 15 mins. Then I finished them off with a direct sear skin side down for like 30 secs

Honest question

So my RYV ML spidey has suffered a bicep swivel break at the hands of my 4yo. I am looking to replace him with a good Todd spidey (but plan to repair him with the bicep screw technique). I am considering the ct 185 spidey, maximum spidey from ML, or holding out for mess toys ultimate spidey. Also have eyes on the gamerverse shf spidey ko.

What are your thoughts? knowing i mainly play with my figures with my 3yo, 4yo, and 6yo. Already have black suit neighbor and black baiman who’re holding up.
