Hair dries stringy and frizzy

Sorry for the slightly blurry photo! I’m on day 3 of my hair journey and still experimenting with different products. I noticed that my hair looks stringy and very frizzy after breaking my mousse cast. And by midday, my hair falls flat except for the very ends having some bounce. My hair is fine and some shampoos/conditioners like OGX Coconut Milk are too oily for my hair if I use them regularly.
My routine today was: shampooed and conditioned with Dove Lavender and Volume and brushed my hair in the shower after conditioning. Used Nexxus 20in1 Humectress for leave in conditioner, combed that with a wide tooth comb, scrunched Herbal Essences Curl Boosting Mousse, then scrunched again with a 100% cotton t shirt. Finally I diffused with my Dyson airwrap and diffuser attachment and used one drop of Not Your Mothers Curl Talk oil to break the cast.
