Simple prep for this week- scalloped potatoes (boxed), vegetable pasta, roasted vegetables, and chicken

I made it out to be four portions of each meal-

  1. Chicken, roasted broccoli and green beans, and the scalloped potatoes
  2. Pasta (spinach, zucchini, mushrooms, onions, tomato sauce, and cottage cheese) and chicken

This week’s prep- vanilla overnight oats, Mac and cheese with chicken and veggies, spinach artichoke pasta with chicken, and meatloaf with hash browns and veggies

I track calories so that’s attached to the ingredient/recipe screenshot. Super simple and delicious meals (i did forget to initially take pics so some are of frozen portions)

Today’s meals largely came from my meal prep-

  1. Vanilla overnight oats: oats, milk, vanilla Greek yogurt, and sugar free maple syrup
  2. Spinach artichoke pasta: pasta, spinach, artichokes, garlic, mushrooms, and chicken in a cream sauce (cottage cheese, milk, spices)
  3. Meatloaf: bbq beef meatloaf, veggie potato bakes (brand is Veggies Made Great), steamed veg

What I ate today - 1536 cals

A bit lower in protein and higher in carbs than usual, but tasted delicious and stayed within my target calorie range so I’m feeling good!

Pro tip for any high calorie spread is definitely to mix it in yogurt to get so much more of that flavor without all the calories

Dinner-one portion of my meal prep enchiladas!

Chicken and bean enchiladas (slow cooked shredded chicken thigh with black beans and laughing cow for filling) made with low carb tortillas. Served with oven roasted mushrooms, peppers, onions, and zucchini

Breakfast-pumpkin pie overnight oats (oats, milk, canned pumpkin, cinnamon and maple syrup) that I have with a protein coffee

Lunch/Dinner options: 1. roasted Cajun chicken thighs with mashed potatoes, butternut squash, and green beans, 2. Spaghetti with ground beef, carrots, spinach, tomatoes and mushrooms topped with cheese, and 3. Chicken teriyaki with rice and bell peppers, onions, and mushrooms

Snacks-cheese sticks, cucumber, baby carrots, plenty of fruit, and chips/crackers that I buy in individual serving bags

Portion of meal prep pasta with some goodies added-600 cals

The bolognese is made with gardein plant based ‘ground meat’ along with a ton of carrots and spinach in a jarred red sauce. Felt like garlic bread and cottage cheese were a tasty addition today!

Breakfast- overnight oats with a protein shake and coffee

Lunch/dinner prepped options-taco bowls, veggie bolognese, and buffalo chicken bowls

Snacks/misc-fruit, veggies, cheese sticks, individual yogurts, and crackers/chips. Diet soda of course always on hand as well!
