Raspberry chia seed overnight oats, Tuscan chicken pasta, tacos (prepped filling), and pulled pork with mash and green beans

Oats: raspberry jam, rolled oats, milk, maple syrup, and chia seeds combined

Taco filling: plant based ground meat, black beans, salsa, taco sauce and roasted bell pepper. I have tortillas, avocado, sour cream etc to add

Tuscan pasta: chicken thigh, cream sauce with milk and light cream cheese, sundried tomatoes, fresh tomatoes, spinach, and plenty of onion and garlic over bow tie pasta

Pulled pork: premade pulled pork (Jack Daniel’s brand), mashed potatoes, and garlic roasted green beans

Also prepped plenty of fresh fruit and veg for snacks that I didn’t take pics of but they do exist!

Simple prep for this week- scalloped potatoes (boxed), vegetable pasta, roasted vegetables, and chicken

I made it out to be four portions of each meal-

  1. Chicken, roasted broccoli and green beans, and the scalloped potatoes
  2. Pasta (spinach, zucchini, mushrooms, onions, tomato sauce, and cottage cheese) and chicken

I track calories so that’s attached to the ingredient/recipe screenshot. Super simple and delicious meals (i did forget to initially take pics so some are of frozen portions)

Today’s meals largely came from my meal prep-

  1. Vanilla overnight oats: oats, milk, vanilla Greek yogurt, and sugar free maple syrup
  2. Spinach artichoke pasta: pasta, spinach, artichokes, garlic, mushrooms, and chicken in a cream sauce (cottage cheese, milk, spices)
  3. Meatloaf: bbq beef meatloaf, veggie potato bakes (brand is Veggies Made Great), steamed veg

What I ate today - 1536 cals

A bit lower in protein and higher in carbs than usual, but tasted delicious and stayed within my target calorie range so I’m feeling good!

Pro tip for any high calorie spread is definitely to mix it in yogurt to get so much more of that flavor without all the calories
