A Whole Lotta Rice

My “weekend” Souper Cubes prep (my days off are Wed-Sat): a whole lotta rice!

I spent this past Wednesday making various rice sides I could add to my Lego lunches, including:
- Coconut Sticky Rice
- Turmeric Rice with Peas & Carrots
- Spanish Rice
- Cilantro Lime Jasmine Rice
- Duck Mushroom Risotto
- Dirty Wild Rice with Corn, Beans, and Sausage

Everything came out very tasty, especially since I used up a lot of the frozen cubes of broth I had previously (chicken for most, ham bone for the dirty rice, duck stock for the risotto).

I used my mini Instant Pot for each batch (2c uncooked rice + spices + extras). After the rice finished cooking, I spread it out on baking tray for 30m, then temporarily stored in a Pyrex for an hour in the fridge before packing my cubes. This helped speed up the “cool down” process you should do with warm dishes before freezing—less condensation from steam, better texture when reheating.

Because I was limited on freezer space and 1/2 cube trays, I tried to split my 1 cup cubes into two by using a butter knife to score the packed cube. Like how you might do when freezing tomato paste or minced garlic in a flat freezer bag. No luck! I’ll try to split them again on a few batches when they thaw a bit, but I froze my last batch (the dirty rice) by just half-filling my cubes to the portion I desired.

Besides wizard intervention, I assumed Homer is a musical genius and got a scholarship. Like how residuals from The B-Sharps explain why the family isn’t bankrupt.

Green Enchilada Casserole

Layered corn tortillas with shredded rotisserie chicken/beans/corn and green enchilada sauce and cheese. Baked in a large Pyrex dish, cooled over night, and then cut and portioned into 1 cup Cubes and topped with a little extra enchilada sauce for freezing. I find layering wedges of tortillas with the filling rather than rolling it like traditional enchiladas works better for freezing for meal prep, as well as keeping the corn tortillas from getting gummy or mushy when reheated.

Assembly is where the magic happens. Once reheated, I topped with guacamole and queso fresco (both thawed from frozen tablespoon cubes), fresh pico de gallo, and a drizzle of Mexican crema.

Warehouse workers are not Roadside Assistance or Tech Support

Network stalling after you scan your route? Route loading with previous stops so you can’t scan your new one? Most issues in the Flex app can be fixed by force quitting the app, logging out and back in, toggling Airplane mode, or (worst
case) uninstalling the app and reinstalling it. What most new drivers don’t realize is that most Amazon warehouse workers have zero working knowledge of the Flex app.

At best, they know common issues and workarounds on your app based solely on what other drivers reported. They have no access or experience with the Flex interface so only know how to debug or navigate the menu based on memory; if you have the app in another language, expect further complications. A fellow Flex driver is more likely to know how to use the app.

Pet peeve is Flex drivers holding up the queue by requesting Road Assistance, like a dead battery or low tire pressure. That’s definitely not the responsibility of warehouse workers. They fix missing or damaged packages, not your janky car.

Ideas for sandwich/wrap filler cubes?

As the weather is getting warmer, I’m looking for lunch meal ideas that aren’t nuked in the microwave. I like assembling my lunches using a combo of Souper Cubes and fresh ingredients. For example, I’ll bring a hoagie, tortilla, pita, or naan and fill it with a 1/2c cube of some protein and then add fresh veggies, cheese, and/or condiments (which could include 2tbsp cubes of things like guacamole or crumbled cheese).

Examples: buffalo chicken, muffaletta

Does anyone have recipes or ideas for freezer-friendly sandwich/wrap fillings? Related: salad lunch ideas that incorporate Souper Cubes.
