Hello everyone. Hope you're all doing well.

It's time to let go of some of the pieces in my collection.

All the photos are from the knives in their most recent state and posted in the same order as the text. Any stains you see on the photos are just patina that will be removed with flitz before shipping.

Let's get the show on the road.

Masashi Yamamoto Kuroshu SLD 150mm Honesuki:

  • Steel - SLD cladded in Stainless Damascus
  • Bladesmith - Masashi Yamamoto
  • Handle - Ebony, White G10 Spacer and Quince Ferrule
  • Edge length - 150mm
  • Weight - 170gr
  • Height - 46mm
  • Spine Thickness (at the machi) - 5.27mm
  • Spine Thickness (above the heel) - 4.91mm
  • Spine Thickness (mid spine) - 3.37mm
  • Spine Thickness (1 cm from the tip) - 2.36mm

I got this honesuki as, in my personal opinion, it has the ideal profile. Perfect ratio between the high heel, very suitable to press on joints and tendons, and the very narrow tip that easily turns, twists and contours around bone. Used it a lot for butchering fish (before I got a deba) and it did pretty well though I wouldn't recommend it for smaller/more delicate fish.

Cherry on top is the beautiful damascus on the polished bevel and the kurouchi.

I established a micro bevel once with the Chosera 1000 and 3000. Still functionally sharp.

Hado Junpaku Shirogami #1 240mm Gyuto:

  • Steel -  Shirogami #1 cladded in Stainless Steel
  • Bladesmith -  Tanaka Uchihamono
  • Sharpener -  Tadataka Maruyama
  • Handle -  Urushi Magnolia
  • Edge length - 234mm
  • Weight - 174gr
  • Height - 50mm
  • Spine Thickness (at the machi) - 2.43mm
  • Spine Thickness (above the heel) - 2.06mm
  • Spine Thickness (mid spine) - 1.85mm
  • Spine Thickness (1 cm from the tip) - 0.86mm

I so don't want to let this on go 😅

In my personal opinion, the best offering from Hado. Tanaka's Shirogami #1 cladded in stainless steel, sharpened and finished by Tadataka Maruyama. Super high level of fit & finish and a more classical approach to a Sakai wide bevel in the Hado offering plus a beautiful urushi lacquered handle. Got this one in 2024.

I really don't want to let this one go but it deserves "more playtime".

Touched up once on a Chosera 3000.

Simon Maillet Tetsu 135CR3 220mm K-Tip Gyuto:

  • Steel -  135CR3 cladded in Wrought Iron
  • Bladesmith -  Simon Maillet
  • Handle - Walnut
  • Edge length - 220mm
  • Weight - 155gr
  • Height - 54mm
  • Spine Thickness (at the machi) - 4.73mm
  • Spine Thickness (above the heel) - 3.6mm
  • Spine Thickness (mid spine) - 2.01mm
  • Spine Thickness (1 cm from the tip) - 1.2mm

I got this one in order to try Simon's work. Put it in the work kit for one month and got some reps in with it. Unfortunately, it doesn't really suit my preferences as I couldn't get accustomed to the profile.

Beautiful walnut handle with a bit of chatoyance and beautiful blade. Bevels come flat and polished by Simon with a Mikawa Nagura to pull out the nice details in the wrought iron.

Never sharpened.

Konosuke BY Shirogami #1 225mm Gyuto:

  • Steel -  Shirogami #1 cladded in Soft Iron
  • Bladesmith -  Tanaka Uchihamono
  • Sharpener -  Undisclosed In-house Craftsman
  • Handle -  Streaky Ebony with Black Horn Ferrule
  • Edge length - 216mm
  • Weight - 176gr
  • Height - 53mm
  • Spine Thickness (at the machi) - 2.61mm
  • Spine Thickness (above the heel) - 2.56mm
  • Spine Thickness (mid spine) - 2.1mm
  • Spine Thickness (1 cm from the tip) - 0.9mm

This was my first Konosuke and I instantly understood the hype. Probably the most beautiful knife in my collection and that is, most likely, the main reason why it got so little use.

Superb fit & finish, absolutely stunning polish and Tanaka's Shirogami #1. It's a thin knife but it definitely leans towards a midweight in use with noticeable convexity.

Never sharpened but it did build a little rust in the past winter which left some stains in the finish. Most of these stains are barely noticeable and at very specific lighting (they look mostly like very small lint fibers) but there are two (one on each side of the tip area) more noticeable ones as well as a hairline scratch on the left side very close to the choir. I'll leave this video here so you can check it out. Comes with its Konosuke original leather saya.

Baba Hamono Kagekiyo Aogami#1 Stainless Dama 240mm Kiritsuke:

  • Steel -  Aogami #1 cladded in Stainless Damascus
  • Bladesmith -  Tanaka Uchihamono
  • Sharpener - Sho Nishida
  • Handle - Black Urushi with Hirame
  • Edge length - 227mm
  • Weight - 203gr
  • Height - 46mm
  • Spine Thickness (at the machi) - 3.35mm
  • Spine Thickness (above the heel) - 3.05mm
  • Spine Thickness (mid spine) - 2.7mm
  • Spine Thickness (1 cm from the tip) -1.05mm

A banger from Baba Hamono. I'm not exactly sure but I think this one is from the first or second batch of this series.

First Sho Nishida sharpened knife I tried and I was amazed. I have used it plenty in my work kit and touched it up once on the Chosera 3000 and sharpened twice on the Chosera 1000 and 3000.

I have long decided that I want the gyuto version of this knife so I was keeping it until I finally get the gyuto but I'll just let it go now.

Hitohira Nakagawa x Manzo Aogami #2 270mm Yanagiba:

  • Steel -  Aogami #2
  • Bladesmith -  Satoshi Nakagawa
  • Sharpener -  Manzo
  • Handle -  Magnolia with Black Horn Ferrule
  • Edge length - 259mm
  • Weight - 182gr
  • Height - 33mm
  • Spine Thickness (at the machi) - 4.32mm
  • Spine Thickness (above the heel) - 4.12mm
  • Spine Thickness (mid spine) - 3.25mm
  • Spine Thickness (1 cm from the tip) - 1.38mm

I actually got this one to butcher fish instead of slicing it. After a few months, I came to the conclusion I'd just rather have a longer deba for fish butchery. I don't really slice protein that much to justify having it in the kit so I'm letting it go.

Established a micro bevel once with the Chosera 3000 and deburred + polished the ura with a very hard 7000/8000 Ohira Renge Suita. Currently very sharp and comes with magnolia saya.

Ele vai ficar!! 🥹

Obrigado Frederico. ❤️

Tanaka Wednesday under the Eclipse

Hey TCK 👋

Hope everyone is doing great!

Today I thought of assembling the Tanaka gang and take some pics during the solar eclipse happening today throughout some select countries.

The combination of the eclipse plus the time of day it happened at, yielded some very interesting lighting. Soft but with a nice pinch of harshness thus the high contrast and some very nice color as well. Barely touched these in post-edit.

See you back in 144 years untill the next solar eclipse in this part of the world 😂.

What would you call this in English?

I suspect this comes somewhere from the chuck but I'm not educated enough to be decently sure

O Ramos a entrar a 7 minutos do fim?

Tirem-me deste filme!!

Patina Wednesday!

Draw out your blues people!

This is my Konosuke Fujiyama FM Shirogami #1 240mm Gyuto. My most used knife since it's arrival about a month ago. It's curious to see that it isn't taking as much of an agressive patina as my Konosuke BY which is made of the same materials by the same bladesmith(s).

Time to see yours 🫵

NKD Konosuke Fujiyama FM Shirogami #1 240mm Gyuto

Hey everyone!

After a few months of hunting, I finally found one of these and I'm really stoked after giving it a quick test drive.

I present to you a Konosuke Fujiyama FM Shirogami #1 240mm Gyuto!

Here are some specs:

  • Steel - Shirogami #1 (Iron cladded)
  • Bladesmith - Tanaka Uchihamono
  • Sharpener - Naohito Myojin
  • Handle - Cedar with blond horn
  • Edge length - 230 mm
  • Weight - 154 grams
  • Height - 53 mm
  • Spine Thickness (at the machi) - 2.77 mm
  • Spine Thickness (above the heel) - 2.57 mm
  • Spine Thickness (mid spine) - 2.08 mm
  • Spine Thickness (1 cm from the tip) - 0.66 mm

Quick Thoughts:

I received this today and still haven't got the chance to truly put it to its paces, but oh man, this grind is crazy. This is my third "oh shit" moment when cutting for the first time with a knife and all the Myojin hype has not disappointed.

I absolutely love the very classy cedar and blond horn handle it came with. I think it really fits the overall aesthetic of the knife. As for f&f, I have nothing to say as this is a Konosuke and everyone knows they don't joke around regarding this.

Some of you may notice that the finish on it is not the original Konosuke FM finish which it does take away from what people expect when Konosuke FM comes to mind. The previous owner had it refinished to a full kasumi which still looks very nice, much better in person in fact (the camera is picking up all of its inperfections 😅). I'm undecided when thinking if I should try to have it refinished (professionally or by myself) but after the few test cuts I did with it, I was left with the impression that this finish is actually helping with performance.

Why do I say this? Well, with very refined polished surfaces, knives tend to create drag in contact with food like vegetables (especially with dense ones). Great example of this is my Hitohira Tanaka x Kyuzo Extra Height. It's the thinnest knife in my current collection, has an absurdly thin hollow grind but its cutting feel is definitely a level below this FM. I suspect that is due to the polished surface of both knives as the FM sports a relatively rough kasumi which imparts very minimal drag when cutting and the TxK is the opposite. Anyway, whether I'll have it polished back to its original (or close to) finish or not, that is something I'll still have to decide.

Have I already said how I absolutely dig the overall look of this knife with this specific handle? 😅 Might just commission a custom saya matching the handle, or even try to find an original Konosuke saya that may fit it. (if somebody has one or knows where I might get one, pm me)

I also feel very lucky as I got exactly what I wanted. A 240mm Gyuto in Shirogami #1. Knife is still very sharp so no need to put it through the stones, but I'm excited for when that time comes as I love Tanaka's Shiro#1.

Thank you and have a great week everyone.

P.S.: Now I can finally be included in all of those filthy "Myojin Sunday/Monday/Tuesday/Wednesday/Thursday/Friday/Saturday" ya'll be posting 🤣🤣🤣

P.S.S.: Thank you to the person who hooked me up with this. Not the first time they have hooked me up with a sick knife.
