Giving her a little love today. Charged the AC, now blows ice cold! Changed the rear wiper motor and giving her a good clean.
Been wearing mostly dresses recently but quite like these new shorts.
Irish potato bread is a great way to use up left over mashed potatoes. I like them better than hash browns.
Ingredients:
2 potatoes mashed with butter & milk (if there’s none left over I use the baked potato option on the microwave and peel & mash them)
Plain/all purpose flour (about 2 handfuls)
Method:
Make sure there’s plenty of butter in your mash and it’s nice and smooth.
In a mixing bowl mix about a handful of flour to the potatoes and mix with a fork (you can use your hands if you want to messy). Add more flour until it forms a soft but stable dough.
Flatten out into a large thin circle and cut in 4.
Cook in a hot dry pan (you’re trying to emulate a griddle over a hot fire) and turn half way through.
Serve with bacon, sausage, eggs and other griddle bread* as desired.
