I just got back from a 5 week holiday in Europe!

I made this on one of the final nights for my friend and I (we met on Reddit 9 months ago and I wanted to cook for her for the longest time :3 )

Enchiladas are easy!

🍗 300g (ish) Chicken breast, diced

🧅 1x medium onion, diced

🫑 1x capsicum (aka Bell pepper, don't @ me) diced

💃🏻 Salsa, 1 small jar, spice optional of you're Dutch or a coward :P

🧀 1/2 cup grated cheese (cheddar, Gouda, Edam all valid, i'd also accept Pepperjack because it's one of the few good American cheeses)

*How to make it*

1. Get your frying pan hot and bothered on the stove. High heat with some oil to reduce friction.

2. Brown the chicken

3. Veggies want to join the hotness so put them in and cook til slightly soft/ brown

4. Add 3/4 of the salsa to the pan then remove from heat.

5. Big spoon the mix into the wraps then roll up then place them:

6. In a baking tray (lined with paper or alfoil)

7. Put 4/4 of the remaining salsa on top the. Sprinkle with cheese.

8. Bake (don't shake) for a period of time at 180C. Idk how long, they need to be brown and the cheese melted and a little caramelised.

9. Remove from oven and eat with your mouth
