I miss working and creating in the kitchen. I got fed up with low wages (or no wages) in fine dining, and switched to the front. Which I do enjoy and am good at, especially bartending and upselling the fun stuff the chef puts together.
But I do miss it, I miss running kitchens and the push of creating new dishes with seasonal ingredients every day.
Hopefully I’ll be back one day, I have some financial goals that just don’t align with cooking at the moment. But I miss it for sure.
Throwing in some photos from a couple of tasting menus I’ve done over the last year on the few occasions I got to cook.
I’ve scrubbed with vinegar but this rust won’t give up, any tips?

I appreciate the input, I’m gonna give it another treatment for rust with a full vinegar bath and put some elbow grease into it and see anymore comes out.
If not then I’ll just proceed as usual with seasoning, as it seems like it is heat damage. I’ll give it a few extra rounds and see how it looks.
I was looking to put this pan up on marketplace but probably isn’t worth much bc of the damage so I’ll most likely keep it and use it.
Corn bread pans are going back in the lye, hard to get that super thin coat of oil, but the rest came out fairly well! Going to do a couple more rounds before they go up on the walls or under the stove.
Going to let go of some of the lodges and unmarked wagners (#6 not shown still has some stubborn rust)
But happy with my baby collection so far!
As a budding collector, what are must haves for in your collections?
I know some old wagners and griswolds are on that list but what are you always keeping an eye out for?
I picked up a really good priced Wagner Sidney O and after cleaning up looks like there’s a crack in the sidewall.
I’m not looking to sell this pan as of now but what would that do to the value after it’s fully restored?

Got a lot of pans the other day and these ones I did the most work on/seemed my valuable from the pull.
Is the “Wagner Sidney” O 8 the 1910-15 era?
And what about the Wagner Ware one, I know that’s a bit younger.
The 2 unmarked I believe are also wagners? I don’t have much experience with the unmarked pans. The “6” with the W I think is definitely but I’m not sure on the “8” with Z1 under the pan size.
Any ideas and let me know if my assumptions are wrong!
Got this lot of 7 for $75 off facebook! The gentleman selling knew he had at least one higher valued pan with the (1910-15?) wager, but looks like I also got 2 unmarked Wagners and another marked (later) can’t quite tell the logo 100% yet.
Any info on the lodge? I know it’s post 60s but I haven’t seen this logo before.
Can’t wait to clean them up!
Restored this BSR (I’m still new and might be wrong) and after all the carbon came off I found this little scratchy engraving. Thanks Marty (I think)!
Anyone have recommendations for an Asian mattress? I’m in northern CO, USA.
I did a quick look online and found one from mattressstorenearme.com that is affordable but not sure if it’ll be what I’m hoping for.
Saw a cool but rusted tetsubin at good will and was wondering what the restoration would be like?
Do you actually season the inside of these like a pan?
Is there a different method after cleaning out the rust to protect the inside from rusting again that isn’t seasoning?

I recently saw a video of Kate Gerwin talking about their 44 inch hieght and side mounted speed rails she uses in her bars, does anyone have a picture of that sort of set up? I’m trying to visualize it and see how it could be done at my current location and would like some input,
