Strawberry Banana Grenade

1 oz Rivers Antoine

2/3 oz lime juice

2/3 oz yellow chartreuse

1/2 oz creme de banane

1/2 oz falernum

1/2 oz strawberry simple (recipe below)

3 drops tiki bitters

shake, strain, coupe.

Strawberry Simple Syrup

equal parts strawberries, sugar, water (though i'll scale back the water next time)

put em in a sauce pan on medium low heat, stir until the sugar and water are incorporated, then use an immersion blender to get rid of any remaining strawberry chunks. let it reduce by about 1/3 then remove from heat. stir to release excess heat, then bottle in freshly cleaned and sanitized containers. add a couple tablespoons of 100 proof vodka to extend the life and deter mold growth.

Sunday Morning (Coming Down) Mai Tai

It's Sunday morning, so let's make a good Mai Tai

1 oz Saint James Rhum Vieux

1/2 oz Papalin Jamaica 7 Year Old (Black Bottle)

1/2 oz Papalin Jamaica 5 Year High Ester

3/4 oz lime

1/2 oz Orange Liqueur

1/2 oz Orgeat

1/4 oz Yellow Rock Sugar Simple (1:1 sugar to water)

hefty float of Lemon Hart 151

shake it, dirty dump.

This is DEFINITELY not a daily driver Mai Tai but hot damn is it delicious. Strong and funky, like The Gap Band.

Yellow Rock Sugar Simple is a very easy recipe.

1 14 oz box of Chinese Yellow Rock Sugar

14-16 oz of water.

simmer on low until all the rocks are dissolved and incorporated. remove from heat, let cool slightly, then bottle into clean bottles. add a couple splashes of 100+ proof grain neutral spirit to maintain freshness. store in the fridge.

Celery Gimlet No. 2

This drink is spectacular. It’s sweet, sour, salty, vinegary, crunchy…just all the things. A really really brilliant preprandial. Feel free to dial down the sugar if you don’t have quite a sweet a tooth as me.

Specs:

6 inches of celery, chopped and muddled in the tin
A pinch of celery salt
45ml (1.5oz) Dry Gin
7.5ml (1/4oz) Green Chartreuse
22.5ml (3/4oz) Lime Juice
15ml (1/2oz) 2:1 Sugar Syrup
5ml (basically a bar spoon) of white wine vinegar
Couple of dashes celery bitters (I used bitter truth)

Shake over ice and double strain into ice filled rocks glass. Garnish with celery stick.

Good use for a bit of chartreuse outside of the usual favourites.

RIP The Track in Pigeon Forge

Much like (I imagine) a decent percentage of Fullcast readers, I spent a good amount of time in Pigeon Forge growing up. Dad's family is from over there, so multiple times a year, we'd pack up the car and go visit. I ALWAYS looked forward to the go kart track and the water slides that were built into the hill, not to be confused with Ogle's Water Park. >!Being kin to the Ogle family didn't hurt matters either.!< But seeing that The Track is closing made my heart weep. I haven't been to Gatlinburg/Pigeon Forge since probably 2000, and I honestly don't think I'll ever go back.
