What are some meals/recipes that are celiac friendly and dairy free?

Wasn't sure where to put this, but my best friend is allergic to gluten, dairy, and isn't a huge fan of meat. I don't want her to have to watch us eat/wait till she gets home to eat when she's over. I don't need anything elaborate, just simple meals if that's possible please. I'm not sure how much she doesn't like meat I think its just like burgers and stuff, but I know she likes chicken!!
