Happy with my first brisket attempt

Just a simple kosher salt and pepper rub and a 225°F smoke until internal temp hit 200°F, rest until 160-165°F internal then hold for a few hours in a 160° oven.

I tried not to overcomplicate my first attempt and I’m shocked how delicious it turned out. Couldn’t have been simpler and it’s one of the better briskets I’ve ever had.

Walked by this cool barred owl by a trail

Tried hard to pass by without spooking him but was unsuccessful. Was really awesome watching him check everything out!
