spring rolls with raw tofu and onions that have soaked in lime juice (left over from a recipe) and pasta with vegan cream cheese and nooch and some pasta sauce that needed using up in my fridge
This is my 2 year olds favourite dinner, normally with edamame beans and avocado, but we were out. If I fed this to her every meal, she would be so happy lol
edit to add: she will only eat tofu raw, no matter how much i try and tempt her with delicious seasonings and marinades lol

NYB’s Everything bagel with avocado, fried mushroom and BEYOND steak pieces. This was my first time trying the steak pieces and I was pleasantly surprised. Usually, my protein sources are legumes (because they’re cheap and I’m at uni) but I’m staying at my sister’s and she paid for the Sainsbury’s shop. Ideally, I would’ve added sweet chilli sauce and black pepper to the avocado but she doesn’t have any in. I ate this while we watched Remarkably Bright Creatures on Netflix (it’s wonderful — I highly recommend). 🌟🥑🐙
It’s fend for yourself dinner in our household tonight. Hubby’s eating 2 minute noodles (by choice) because my plate was, quote ‘too busy’ for his liking hahah

Smoked tofu, coleslaw mix with approximately 400 cups of mayo and 30 pickles, pretzels, and a dry as fuck lemon blueberry Blondie. Giggity
I use dishes like these to clean out the fridge.
Bottom layer - Meat-y - an open bag of meatless meatballs and an open bag of veggie burgers made into grounds and seasoned with herbs and chili flakes
Middle layer - Cheeze-y - tofu, nutritional yeast, a bag of shreds, and all the open cheese like spreads I use for snacking or baking… whatever works
Top layer - Veg-y - I had a ton of mushrooms in the fridge and some frozen chopped spinach
I had open jars of sun dried tomatoes, Kalamata olives and capers, I roughly blended those with their juice and stirred it into cheep sauce and a can of diced tomatoes for texture. It made the most ridiculously delicious pasta sauce. OMG.

He microwaved the vegan dino nuggies and threw some stuff together. At least he used a plate and sat down this time (he usually stands and eats in the kitchen if it’s a quick meal) 💀
