I find that when I chop things up a bit it tricks my brain into thinking I’m eating more! So I chopped up a sour cream and chive rice cake, a pickled gherkin, 2 pickled onions, a boiled egg, and threw in some tomatoes

Baked Buffalo chicken thighs with roasted cauliflower and avocado

I just prepped these chicken thighs for the next few days, this will definitely be a favorite!! You could probably do without the blue cheese to make it lower cal

Spring salad, chicken and miniature potatoes

I used this recipe: https://www.bbc.co.uk/food/recipes/spring\_pea\_salad\_with\_84930

The subs I made were:
* For the sauce, didn’t have parsley so used basil. Also didn’t have garlic so omitted this and didn’t notice the difference
* didn’t have broad beans so subbed chopped Brussel sprouts
* instead of watercress I used mixed baby leaves and rocket
* on the chicken thighs I added garlic powder, dried mixed herbs, and onion powder
* to the dish I added miniature potatoes with some dairy free margarine on and garlic powder

If you could only put one kind of seasoning on vegetables, what would it be?

I'm trying to eat more vegetables, and I find them rather boring, but I know my body needs them.

whether they are steamed, roasted, etc., what is your best, easiest seasoning blend to really bring out the flavor? it could be a store-bought, pre-made brand/blend (<---preferred) or your own special blend.

Roasted veggies are the best

Filet mignon, zucchini, peppers, cauliflower, carrots and a decent serving size of garlic red mashed potatoes

Audrey Hepburn's Tricolore Caprese Salad

Audrey Hepburn's Tricolore Caprese Salad from the book Audrey at Home written by her son Luca Dotti.

This was a very easy to make recipe. I love a good Caprese Salad, and this one offers an addition of sliced avocado.

  • Slice the tomatoes, avocado, fresh buffalo mozzarella
  • Sprinkle with salt & pepper
  • Drizzle with extra virgin olive oil and balsamic vinegar
  • Toss on a few fresh basil leaves

and you've got yourself the dreamiest summer lunch ever!

In fact after I made this and shot a few pics, I gobbled it all up for lunch! It disappeared so fast, I hardly had time to think about it!

All I can say is this combo is classic and with the addition of avocado, it just takes it to another level. Delicious!

Salmon Sandwich with Fresh Vinschgau German Bread

It was one of the best meals I had! Salmon in olive oil (on low heat for a long time) with fresh Vinschgau bread (German bread), lemon, tomatoes, and lettuce.
