Baked ricotta and cottage cheese pasta

Hello guys how r we doing today? Another throwback dish me and my flatmates made last year we wanted to make pasta as authetic as possible and we were tired of making the same old alfredo or carbonara so we tried some different and we had our hopes so high for this but cant lie this only looked good but the taste was mid although it tasted fresh but its just not hit like the other ones.

Chennai people, what's one food you can never get bored of?

Doesn't matter how many new restaurants open or how many different cuisines you try...

What's that one food in Chennai you can eat anytime and never get bored of?

Could be biryani, dosa, parotta, idli, kothu parotta, pani puri, street food, filter coffee + something, or even something very specific to your favourite shop.

What's yours? 👀

Authentic Alfredo pasta

Tried Alfredo pasta in Pondy while on a trip with my friends, only to hear that the white sauce pasta we get in our office at half the price was way better. 🥲
Who here prefers the usual version of western food we have than the authentic one?

Day by day my respect towards people who showed up in the kitchen for every meal is growing!

One hour in the morning and I'm sorted for the day 🙂‍↔️This should ideally take only 30-45 mins. All of these are easy ones. I either just chop, boil and mix it. Or soak them. That's it.

Day by day my respect towards mothers is growing 😭 These wonder women were preparing EVERY SINGLE DAY! Sila Working women vela mudichutu night vandhu dinner prepare panranga. Working women kind of have a life outside the home. But for homemakers, veetlaye irundhu mind evlo gaanda irukum?

I mean howwww.

The first thing after I come home I go to the fridge and get this soaked oats. Which is just what I already got it ready in the morning.

But in our households did we have this space? No! Sooda dhan saapduvom, idhula complaint vere panuvom. Epdi dhan night vela la mudichutu vandhu, chapathi maavu/dosa maavu la munadiye plan pani Adhuku oru side dish ready Pani. Apram night paathram la wash panitu..No freaking way 🫠

I'm not even able to feel grateful because not everyone got this space that I have. I slightly have control over things I do. But for the ones who didn't had a choice? I can't imagine 🫠

Update: I Cooked Pomfret 🐟

Some of you might remember my earlier post where I was trying to figure out which fish to start with.
Pomfret won the comment section and I went for it.

No dramatic kitchen story. No major disaster. Just me, the fish and my trusty air fryer.

I followed the first recipe that came up on YouTube Shorts and surprisingly it turned out really good. I think I went a little overboard with the lime juice..it tasted a little too lime(y). But for a first attempt, I’ll happily take this. 😄

Big thanks to everyone who recommended pomfret and shared their tips on my last post. You may have accidentally created a person who now thinks they know everything about fish😌

Edit: Adding the recipe here.,

I had used 400-500g of River pomfret
Red chilli powder 1tsp
Kulambu powder 1tbsp
Coriander powder 1tsp
GG paste 1tbsp
Salt
Lime - half (I used one whole lime)
Curry leaves finely chooped
Oil 2tsp
Water as required to make thick masala paste.

Coat the fish slices and marinate for 30mins
Preheat airfryer at 200c for 3mins.
Grease the airfryer basket and Airfry the fish for 10mins at 200c, flip in between.

Pazhampori love….❤️

It gives more taste when it is done by the people you love… and that person made it for you…😬

Whats your take?

Do you add ghee in your biryani!

For me, its subjective. Usual chennai style basmati biryani, i prefer no ghee. With seeraga samba, Konjama ghee. With hydrabadi biryani, loads of gheee 😇😭

How do you go about it 🤌

Guyzz, prepared Biriyani today, turned out soo good 🤌🏼

I’m living in blr, been craving for Chennai style biryani for soo long.

It’s too difficult to find Chennai style biriyani in blr (At least I could not find any such places 3 years of living here).

No hate for other biriyani styles here, as a guy from Pondy, studied from Chennai. Chennai style biriyani has always my fav kind.

I’ve been following my thala (DKFoodJunction) for a while and finally decided to make it at home following his recipe. Honestly, it turned out soo freakin good.
I’d say it is close to 85% to the Chennai-style biryani taste.

Indhe salad eh poi sandhega pattene 😤❤️

Indhe salad dappa la podrapo ore doubt. Ayo idhu paaka Nallave ilaye, chicken sakkaiya Iruka pogudhu iniku avlo dhan nu sogama kelambitu irundhen.

Apram office ku vantu saapudren, it was heavenly! The dressing of the salad+ boiling veggies elevated the taste🥹

Onion Tomato Cucumber add panna maranten, but I don't think so I'll need that. I loved this one version!! Around 25-30grams protein this is

Dressing

- Hung curd

- Pepper

- Garlic

- Salt

Salad

- 100 grams of chicken breast

- sweet corn

- carrot

- capsicum.

Ivanga elarayum idly cooker la boil panne for 10-12 mins (salt add panala, enaku epdi add pananum therila since I've placed them all on idly plate I was wondering epdi da salt poduvanga)

Then only realised the salt from the dressing is sufficient and chicken got blended well with the pepper and salt from the salad.

I'm the happiest😤❤️

For the ones struggling with junk especially the fried rice gang. This is for you! I've been there, and this recipe is helping.
