I have never played a Paradox game before, what's the best game for building stuff and watching economy number go up?

My experience with strategy games so far has been with Civilization (mostly 5, some 4) and Total War (Empire and Medieval II). I have been told before that Total War is not really the best fit for me because I don't really like commanding battles - I will if I have to but I think it's kind of tedious - in favor of getting so rich that I can hire so many armies that I don't have to command battles and can just autoresolve everything.

No, the actual part of Total War I like is the empire management. In Med2, upgrading all the farms and mines and roads and walls and making the cities as big and advanced as possible, and war is a means to an end to get more cities to upgrade. Likewise in Empire the fun part is progressing down the tech tree and building out all the factories and watching income per turn go up. In Civ I just like building cities and playing wide and putting all the buildings and Wonders in as many cities as I can, and mostly try to stay out of wars until the very end when there's not that much left to build.

I do like changing the color of the map (especially if it's blue), but possibly more than that I just like to watch number go up, and more number go upper if the map is bluer. CK3 is on sale right now, and I do like the time period, but everything I read about it is says it's for ""roleplaying"" and I just don't care that much about individual characters. (My king in M2:TW died? Oh okay. Anyway) Would Victoria or EU be a better fit?

Potential plot hole / something I never understood about 3-5

Indeed, he very nearly didn't; he refused to take them to Hazakura Temple until he saw Iris on the magazine cover. And even if Morgan knew of the connection between Phoenix and Dahlia, it's not like she controls what is printed in the magazine and when. I think we can assume Pearl was actively looking for a reason to go to Hazakura Temple because she wanted to follow Morgan's instructions, but Morgan's plan seems to hinge on the cooperation of multiple things she cannot actually affect. So did she just get obscenely lucky, or what?!<

Game instantly freezes upon destroying a faction

SS 6.4, I am very deep into a Hungary playthrough that I'm desperate to not have to restart because I've gotten quite far, I have conquered almost the entirety of the west. France is down to one city, but upon taking it, I could hit with a "pure virtual function call" error message and CTD. If I reload the save and try again, it doesn't crash, but it does freeze up indefinitely. I saw on the TW forums someone suggested that, since you know the faction is going to die anyway, you can try killing them with a console command (surrender_regions france) first and then take the city - this does not work, the city does become rebel but the game then freezes before it can delete the remaining French units.

I've have seen this a couple times before, only when a faction is destroyed, and also only sometimes when a faction is destroyed. I really really don't want have to throw away this playthrough, is there no fix for this?

Anyone who has played Roar of Conquest: what are you supposed to do as Georgia?

You start out surrounded by huge and much more powerful empires on all sides (Golden Horde, Ilkhanate and Ottomans) who seem to have a "fuck you in particular" attitude and start beelining all of their forces towards you if you don't get an alliance with them locked down ASAP. The Golden Horde seems to be particularly resistant to allying you and will start besieging you by turn 10 if you don't. Even if you do get all 3, you'll be forced to break one by, I dunno, turn 20 or so, and then they'll say "fuck you in particular" and start beelining all their forces straight towards you. Is there any strategy where you don't just immediately get run over?
