So yeah, I made a Chili Cheese Dog Wellington while on edibles. All beef Hot dogs, hot dog pâté, chili duxelles, prosciutto, nacho cheese sauce, scallions, Aleppo pepper, & pickled jalapenos.
It took most of a day while binge watching MasterChef Australia but it was delicious.
Too often, my quest for making pizzas with interesting & wacky toppings causes me to forget the absolute heaven a simple cheese pizza can be.
Used the Serious Eats dough recipe with homemade pizza sauce. Topped with mozzarella, cheddar, Monterey jack, & parmesan. Baked in my Bushwick apt. oven at 500°F for 24 minutes.
Used a another Serious Eats recipes for my birthday weekend meals...
For my 2nd birthday dinner I took leftover Cuban pork & made a Cubano sub on a pressed baguette. (I couldn't find Cuban bread.) Spicy mustard, homemade dill pickles, maple ham, & Swiss pressed between 2 cast iron pans with pork fat.
As the pork shoulder I roasted came skin on, I used the skin to make some Tajin dusted chicaronnes. Perfect crunchy side for a delicious sandwich.
Took the Serious Eats Cuban pork & mojo, Cuban black beans & rice, & Maduros recipes & spent the day drinking mojitos & making my birthday dinner. Easy prep & mostly passive cooking. 6 hours well spent & eaten in 20 minutes.
The wife wanted duck poutine & I decided to go in a roasted potato direction.
Duck fennel sausage, homemade mushroom gravy, perlini mozzarella over duck fat crispy roasted potatoes & finished with scallion & Aleppo pepper
Detroit style pizza with mozzarella & monty jack, tajin fried corn & scallion, garlic parmesan sauce, & feta. Finished with chipotle lime crema, tajin, & scallion greens.
I was watching S1 E23 "Backsliders" & noticed Schmidt tried to comfort a post-Russell depressed Jess who believes she's going to die alone by predicting she won't because we will all be immortal by 2026.
...somehow I made this big tray of mushroom lasagna.
