Capital One + AMEX -> Chase

Thinking of getting rid of my American Express platinum and capital one savings accounts and blending all accounts to Chase and opening up a Sapphire card. Anyone have any experience or insight as to what is better? Looking to limit the amount I spend (which is a personal thing too, not really the card) but also feel I don’t get as much out of the AMEX.
