I’m new at sewing, and im having doubts about sewing with seam allowances, am I supposed to sew at the line? And how can I precisely copy it to the fabric itself?

Excuse my horrible draft but, I’d like some advice on how to go on with drafting the seams on this plushie I’m going to make, I overthought it and started segmenting things a little too much, and I’m really in need of some help and correction so I could make this plushie a reality! This plush is going to be on a smaller scale, so this many segments would be a bit much
