Sheet Pan Gnocchi (easy vegan dinner!)

Mix cut vegetables of your choice, a drained/rinsed can of chickpeas, and gnocchi in a large bowl with a drizzle of olive oil, chopped basil, minced garlic, salt, and black pepper. Spread evenly on a sheet pan (or two if you are making a large batch).

Bake at 400°F for 20 minutes, stir and spread evenly again, and bake for another 15 minutes.

Once out of the oven, sprinkle with vegan feta (I used Follow Your Heart) and drizzle with balsamic vinegar.

For inspiration, I used these veggies:

Onion

Bell pepper

Zucchini

Green beans

Cherry tomatoes

Mushrooms

Broccoli

Three week sauerkraut ferment with white cabbage, red cabbage, carrots, and 2.5% brine. Funky and delicious!

Cherry Pie from Homegrown Cherries!

Simple gluten-free crust prepared with 1-to-1 all purpose flour and almond flour.

1 1/4c 1-to-1 AP flour

1 1/4c almond flour

1/4c cold butter (I used vegan butter)

1/2c water + more as needed

Mix all the ingredients together and add more water as needed to get a texture where the dough sticks together but isn't sticky. You always add more water, but you can't take it away!

Take 2/3 of the dough and press into a greased pie dish. Take the remaining 1/3 and cut out shapes and cover the cherry filling. Bake at 350°F for 50-60 minutes.

For the filling, I just heated about 4-5 cups of pitted cherries with 1/3 cup sugar and a splash of vanilla extract over medium heat for 15-20 minutes. Added 3Tbs cornstarch/water slurries and stirred until thick. Allow to cool before adding to your pie.

First time foraging bamboo shoots

Found a bamboo grove nearby and ran down a YouTube rabbit hole. Grabbed a few handfuls during my lunch break today to see if they're any good. Peeled and then boiled for 45 minutes switching the water halfway through. Might be stepping up my stir fry game!

Sunday is Waffle Day!

Vegan and gluten-free cinnamon and vanilla waffles made with 50% King Arthur AP gluten-free flour and 50% quinoa flour. Berries fresh from the garden!

Every Saturday for the last couple years, I make the same breakfast for my twin boys. It is celebrated every time (I think it's the potatoes 😂)
