I imagine that this will be the final shot of season 3

I think it would make sense to end the season with the introduction of Saint Germain since he's basically the big bad of the manga, and since season 3 will only cover the Space Globalists Arc then that makes this more likely

Since every Yokai we've seen in the anime has their own color palette (red for Turbo Granny, Pink for Acrobatic Silky, and purple for Evil Eye) what do you think the colors for the upcoming Yokai will be?

Information Broker Arc- This arc is 25 chapters long, and since each episode adapts 3-4 chapters this could probably be done in about 7 episodes

First Job Arc- This arc is 17 chapters long, so it will probably be about 4 or 5 episodes

Doll Festival Arc- They obviously won't cover the entire arc this season since it's so far the biggest arc in the manga, still going after 1 year, but if the season is 24 episodes then they could probably cover a good chunk of it. Probably the first half of it, they might even be able to fit a little bit of God Mymo vs. Wolf Rudo, maybe the season could end on a cliffhanger right before they clash.

So basically, here's what the entire season would be

Episode 1- Rest of the Heritage Mural Arc

Episode 2-8- Information Broker Arc

Episode 9-13- First Job Arc

Episode 14-24- First half of the Doll Festival Arc, possibly ending on a cliffhanger

But this is just what I think will happen, let me know what you think.
