This was such a delicious summery treat/breakfast :)
Indulgent tirimasu layered oats!! I want to eat this every single day for forever lol.
My recipe:
For the oats:
1 cup old fashioned oats
~3 tsp espresso powder
Splash of vanilla extract
Dash of cinnamon and nutmeg
Packet of Splenda, or use sweetener of your choice
Mix together in a microwave safe bowl, add water until soupy. Add a splash of coffee if you have some lying around :) Microwave for 2-3 minutes, stirring every minute. Or cook on stovetop if that’s what you prefer!
For the topping:
2/3 cup vanilla Greek yogurt (I used Friendly farms super zero from Aldi)
A splash of milk
A small scoop of sugar free vanilla pudding mix
(I also want to experiment with using mascarpone or cream cheese here but didn’t have any on hand lol)
In a separate bowl from the oats, blend together with whisk or milk frother until thick and creamy, let set for a couple of minutes.
Layer topping on oatmeal, finish with a dusting of cocoa powder, some berries if you’d like, and enjoy! Comes out to be about 22 grams of protein and around 500 calories for those wondering, a delicious treat oatmeal that’s not too sugar heavy! :)
Visiting Iceland on a study abroad trip for 10 days and I HAD to see puffins, so I booked a puffin tour by boat and was overjoyed to see them, but was a bit too far away to get great quality photos. Well a couple days later doing a tour of the south coast with my class the tour guide surprised us with a stop at a place where puffins were nesting on cliffs right nearby a trail!! And so I was able to see puffins up so close and these once in a lifetime shots and I am so incredibly happy and grateful 🥰
10 day study abroad trip in Iceland and I have fallen in love with this incredible place 💟 Seeing one of my favorite birds of all time and having the chance to do a little research project about them has been one of the most amazing experiences of my life!! I’m not even home yet and already thinking about planning my next trip back here :)
