Activity rings are greyed out

Activity Rings are greyed out on my apple watch main screen. Clicking on the rings on the watch, opens the main app and Rings are active and colored. Rings are also colored and active if I go to the fitness app on my Iphone.
Come tomorrow morning, if open fitness app on my watch or iphone, it will show that rings were paused.
Furthermore, currently in my health app it shows that my rings are paused (today, yesterday, since monday - that's when the problem started)

Went to apple watch, they were clueless and have not fixed the issue, things they did:
restarted my watch/iphone
unpaired and reset my watch
Reinstalled the watch OS
Still nothing.

After 3 hours, I convinced them to rest my watch and pair to a brand new iphone (different apple ID to mine), after that rings worked just fine.

So I guess the issue is coming from my health app. Has anyone seen this?

Ultra 3 cellular (Iphone off)calls only work when bluetooth is off

just tested multiple times, unless bluetooth is off on the watch, when calling your number it will say unavailable.
So how do can I have my air pods connected to my watch while making calls, when my phone is dead?

Apple Watch Ultra 3 - Number Share feature

Did they change something, few months ago, when I initially got this watch I tested the cellular plan on my watch. I turned off my iphone, called my iphone number (number share feature is on with my watch), watch rings no problem - just like what you would expect since you pay 15$ a month for that feature.

Today, I turned off my phone, decided to call my number, it's say user unavailable, my watch is on.
I go to Verizon, they literally say we don't know whats going on, try Apple.

Anyone?

is this future proof for a casual user gamer + light/semi intermediate AI use

moving from base macbook air m2. I want to future proof and at the same time start using AI agents to run simple day to day staff. I also do some gaming like dota 2.

Should I go for M5 Max chip, is that over kill or not. Again my priority is to future proof for like atleast 5 years.

Thank you
