What I made with leftovers

I had leftovers to use up in my fridge.

The 1st photo is the end result.
2nd and 3rd show the leftovers.
4th is after right after adding the spices.
Last photo is with everything in the pot and just about to boil.

sausages with fried onions and peppers.

was the meat left on a roasted chicken and beans in butter.
(I removed the meat from the bones already before photo and put the carcass in a freezer bag to make bone broth when I get time.)

I needed to make a new dinner using up these things and enough for 6 servings.
I decided to make something like a jambalaya as in my pantry I had a can of diced tomatoes and rice. I also threw in a frozen spinach cube 🤭, I know that is not in jambalaya but I wanted to get a little more veggies in the meal.

Below is what I used to make the meal and what I did to make it.

Shredded chicken (stripped from carcass)
2 leftover sausages, sliced
1.5 cups of leftover veggies
1 cup uncooked long-grain white rice
1 can of diced tomatoes
1.5 cups chicken broth
1 frozen spinach cube
1.5 teaspoons paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
Hot sauce (to taste)
1 tablespoon cooking oil or butter

Step 1.

Heat 1 tablespoon of oil or butter in a large pot or deep skillet over medium heat.
Add the shredded chicken, sliced sausages, and leftover onion/pepper mix.
Sprinkle the paprika, cumin, cayenne, salt, and black pepper directly over everything.
Stir and fry for 2 to 3 minutes until the spices smell fragrant and coat the meat.

Step 2.

Stir the uncooked rice into the pot, coating the grains in the spiced oil.
Pour in the diced tomatoes and the broth.
Add frozen spinach cube and a few shakes of hot sauce, stir well.

Step 3.

Bring the liquid to a boil.
Immediately turn the heat down to low.
Put lid on the pot.
Let it cook undisturbed for 15 to 20 minutes until the rice is tender and the liquid is absorbed.
Do not lift the lid while it cooks!

Step 4.

Turn off the heat.
Let sit for 5 minutes before serving.

You reap what you sow

This happened many years ago, but this is one of many memories that resurfaces about my childhood.

For context my bio Dad has a wife and kids. He cheated on his wife with my Mom and I am the result of that mess. That side is aware of me but I’ve had no contact with them.

Growing up I would barely see him, maybe once or twice a year. And when I did, I was never allowed to call him Dad and he would introduce me to people as a “friend’s kid.”

My parents have always remained in contact with each other. He kept in contact with her more than me. She use to try to tell me stuff that they talked about. As I got older and understood this wasn’t how other families worked. I would tell her, if he didn’t want to come see me to tell me himself then I don’t care. Eventually she stopped telling me.

The above was for context, here is where my pettiness comes in.

When I was 18 one of my mother’s siblings passed away and my Dad came to the viewing. During this viewing he came up to me and requested I go for a drive with him as he wanted to talk to me.

I went with him and after a bit he started telling me he had made some choices in his life that he now regrets. He went on like this for a bit, but it was pretty much an emotional dump on me.

He ended this with how he wished for me to call him Dad going forward.

I sat there not saying anything the whole time he dump all this on me and many things racing through my head. I suppose I was silent for a while after his last statement as he said, “so what do you think?”

I kept my eyes facing forward not even trying to look at him as I knew he kept looking at me as he drove. I just told him, that he could wait 18 years and I’ll see if I’ll allow him to call me daughter.

In my peripheral vision I saw him just look straight ahead and he was quiet as he drove us back to my family members viewing.

I have never addressed him as “Dad”. I’m currently only doing it here so people can understand the dynamics. Once I moved out on my own I’ve had zero involvement with him.

People leaving their used makeshift bidet bottles all over the public washroom.

This public washroom has these used water bottles in practically every stall.

I believe these are from some of the people who work there. I was in the washroom just starting to wash my hands and one of the workers (wearing a uniform) walks in goes to a stall and comes out with one of these bottles. They filled it at the hand sink and went back into a stall with it.

What I made with my reduced food purchases, in Canada.

I got a reduced produce bag, pasta and a salad kit for just under $12 CND last week. And about a week prior I had gotten a reduced kolbassa for $3.99 CND. I included photos and it shows the savings, which doesn’t include the savings of the produce bag as it’s a mixed bag.

I made a pasta dinner with salad and it served 5 portions.
The produce bag (I have included the photo) had a good mix and I used some of the ingredients to make the sauce.

I cut the veggies first then started to boil water for the cheese pasta, and followed the directions on package.

For the sauce I diced up the tomatoes, 1 red onion, cut the corn off the cob, and diced most of the peppers.

I did reserve some peppers to make a veggie snack tray which included the carrots and cucumber from the bag.

I had some celery and radishes in the fridge so I added some to both the sauce and veggie tray.

From my pantry I added 1 minced garlic clove and dry seasoning to taste, salt, pepper, oregano and thyme.

First add some oil to a pan till hot then add in onion, celery, garlic, radish. Cook till onion and celery almost translucent, about 2 minutes.

Add in the rest of the veggies and seasoning. Cook about 5-6 minutes stirring occasionally, until tomatoes break down and peppers to desired taste. (Some like a bit of crunch others may want it softer).

I left as is but sometimes I will add some broth (amount depends on how much veggies I got in the pan) about 1/2-1 cup.

Serve on top of pasta.

I made a fruit bowl with the oranges and kiwis for lunches.

A couple days later I used up the potatoes, 1 red onion and the left over veggies that didn’t get eaten from the tray. I added in kolbassa that I had purchased reduced a week prior, sliced and froze, and the last of my eggs.
Used dry seasoning to my taste, salt, pepper, garlic pepper, smoked paprika and thyme.

Dice up potatoes small and add to a bowl of water as you go, letting it soak in until ready to use. Dice the rest of the veggies and kolbassa.

Kolbassa is ready to eat so no need to precook before veggies. But if I was starting with raw bacon I would cook the bacon in the pan first, set aside and reserve some of the bacon grease to fry the potatoes and veggies in. But since I’m not this time I added in oil to the pan.

Turn heat to medium or medium/high depending on your stove. Heat about 1-2 tablespoons of oil in a pan. Drain potatoes and shake as much of the water out as possible. Once oil is hot carefully add in your diced potatoes. Try not to over crowed your pan, it should be a single layer to cook faster and evenly. When I did this batch I had a few small potatoes in my pantry that needed to be used, so I did over crowed it and it took a lot longer to cook. But I’ll give directions for non crowed pan.
Cook for about 10-12 minutes then flip and stir them around. Add in the diced veggies and frozen diced kolbassa continue to cook for about 8-10 minutes, stirring occasionally. Add your desired seasoning in the last 2-3 minutes of cooking.

Since my potato pan was over full, I scrambled my eggs and cooked in a separate pan, seasoned with salt, pepper and cayenne.

I still have 1 sweet potato and 2 onions left which are still firm. I will use later this week, just haven’t decided yet in what way.
The limes were used in our drinking water.

Buckle your toddler in if you are going to have them in the shopping cart seat!

Many times I’ve seen kids fall out or almost fall out because people don’t buckle them in.

The other day I’m stocking and 2 ladies come to my area pushing a cart with a toddler about 3 years old. They stop pushing the cart and they both go to different sections, leaving the kid there.

The kid seeing them walking away starts trying to figure out how to get their legs out to stand up. They struggled for about half a minute but they got one leg out and under themselves then started to lean their upper body forward to try to get the other leg out. I for sure thought they were going flip right out and land on their head. Instinctively I rushed over and extended my arm out in front of them so if they were to fall my arm would block them. I was not going to put my hands on their kid unless I needed to catch them.

The ladies just casually walk back and the kid was now standing up in the seat holding my arm. They never said a word to me not even eye contact, they just talked in their own language to each other and picked up the kid. They didn’t even acknowledge the kid, just picked them up took the cart and walked away to continue casually shop like nothing even happened.

This really irritated me so thanks for reading.

I’ve even seen people let their kids sit inside the very bottom of the cart, where it’s under the actual cart but has a place to put like a case of water or pop. They sit on the bottom with legs extend out under the basket of the cart and their chest and face are facing the basket of the cart, with there back exposed to oncoming carts. (I hope this makes sense, lol) Like are you really trusting other people to not crash their cart into yours? I do believe the way people push their carts is the way they drive their cars.

When the power goes out, why do customers ask us when will it be back on?

Literally every single time!
I’ve worked in retail for a very long time and any time it goes out so many customers ask this.

Then you get the ones that complain that they are in a rush and you need to fix it!
Like lady, do you think I work for the power company? Obviously not I’m wearing a retail store name badge.

I want a discount!!

I work in a store that has a bakery and a hot meal section that is self serve, like chicken and potatoes.

The employee that was working the kitchen to make the foods in the hot section had all the food offerings in the hot self serve counter and left to take their 15 minute break. I was on the floor stocking the shelves in the same department and keeping an eye on the service counter. As customers always have questions about the hot food or want extra utensils etc.

A customer asked me where a specific product was and asked me to take them because they never been in our store before. This person is elderly with a walker so I do tend to go more out of my way to assist them. I offered to go grab it and come back while they wait. Some seniors come out daily to the store to get themselves moving so most rather come with, but I still like to offer. This lady was thankful and said she’d been walking around trying to find the item and would take the time to sit in her walker. I looked over at the hot service counter and no one was there so I left to get their item.

I was gone about 3-4 minutes and as I made my way back I spotted a man standing by the service counter in front of the hot chickens talking to my coworker from bakery. I give the item to elderly lady she thanked me and we parted ways. Same time the baker makes eye contact with me, a look that I read as, this guy is complaining.

I make my way over and the baker tells me the customer wants a discount on the hot rotisserie chicken. I say hello to him and asked about the discount. He starts by going off on me and yelling that he has been standing there for over 30 minutes waiting for service. I said really? Sorry to hear that, not sure how I missed you while I had been working here during that time. So what is it that you needed that had you waiting? He angrily said I wanted a chicken and you made me wait because you were not behind the counter to serve me!!!

I look away from him and look at the self serve section of chicken that we are standing infront of and slowly reach out and pick up a chicken from its handle and lift it up saying, you mean one of these? He sneers and said yes! You have to give me a discount for making me wait!!!

I said, sir there has been hot chicken available in this self serve counter for you to take any time you wanted, whether or not some is behind the counter. I’m not sure how anyone made you wait.
He completely ignored what I said and just yelled, so you’re not going to give me a discount?!?!? I informed him I wasn’t going to.

He was even more angry than started to ask what time would we be marking some chicken down. At this store we mark down the hot food after a certain time frame so food is fresh and stays compliant with food safety. I read the time stamp on the chicken in my hand and informed him in 1 hour.

He then demanded I should just mark it down for him now cuz he wants to buy it. I said no sorry we will be following proper protocol and if it’s still available in 1 hour we will mark it down then. He yells and says it will be gone by then!!!! I said yes most likely, but if by chance it’s still there in an hour it will be reduced at that time.

He thinks he is so smart and smile’s evil at me and says, well I’ll just put it in my cart and come back in an hour and you’ll have to mark it down! Crossing his arms across his chest for emphasis. I said, no that won’t work. It will be out of temperature by then and if you bring it back we will temp it, if it is below the safe temperature for hot food we have to discard it as we are not allowed to sell it below the safe temperature zone.

This obviously made him even more angry and he was freaking out and demanded why I can’t just give him a discount because he wanted one!

I am still completely cool and talking to him like he was a nice customer. Kill them with kindness I say, plus these types will complain that you were rude to them to try to get what they want. I informed him I am just following the protocols that are set in place and I’m not going to get in trouble for marking items down that don’t qualify for it. If he’d like he can try a manager and I’d gladly call for one if he’d like.

Of course he wanted to and of course he was nice and sweet for the manager. He stayed with his story of how no one was there for over 30 minutes and how I am refusing to give him a discount.

Thankfully the manager had been close by and had witnessed some of his interactions with me. The manager looked at one of time stamps on the last food item that was made before the person cooking went for their 15, which of course meant their was someone in the kitchen when he was supposedly waiting 30 minutes. The manager mentioned these things and refused the random discount for just because they want to buy it.

This happened many years ago when online and digital shopping wasn’t very big yet and electronics was always busy.

I have worked in retail a very long time and the managers move me to different departments all the time, due to sick calls or bad coverage. At times I get placed into departments that I have zero to minimal knowledge of.

On this day I was asked to help in the electronics section because there was only 1 staff member in and he couldn’t keep up with running the till and providing customer help, as it was a busy day.

Essentially he would field the questions, provide information and unlock products customers wanted and give them to me to ring up. I would have a set of keys for the game cabinets so I could retrieve them, as most customers would know what game they wanted.

I was cashing a customer out when an older couple came up and stood there waiting while I finished with my current customer.

I greeted them and asked what can I help them with, they said they needed help and had questions about the laptops. I let them know I didn’t know much about them but I would get my coworker who is knowledgeable to help them.

I walk away from the till and walk around to the next aisle (there is a tall shelf blocking my view of the department from where the cash register is so I have to go around it to find my coworker.) The couple follow me. I see coworker, who happened to be close to the laptops, I head towards him and as I approach I get his attention and let him know this couple has questions about laptops. He looks over to them says hi.

The husband looks at me and says angrily, we asked you to help us not him. I re-explained that he was the most knowledgeable person I know in regard to anything electronics and is better qualified to assist them. The husband raised his voice and pointing his finger at me asked why was I even here?!You’re here to help us!!!! Again using his finger like a wild man and repeatedly pointing to himself and his wife.

Again I explained my lack of knowledge on laptops that this area was not my normal work station but was asked to assist with cashing customers out so my fellow coworker could help customers more one on one and answer questions.

The wife says while pointing at my coworker, we saw him and we have seen him working here in the past. We do not want to deal with him because he is … well you know….

She let it kinda trail off not specifying what she meant but making her eyes go super wide and slowly nodding at me like I was suppose to be receiving some telepathic messages from her.

My coworker is standing there and can clearly hear them speak and act like this. I said no, I don’t “know” what you are talking about. He is a very smart person and is extremely knowledgeable with anything in this department.

They both just gave me a face and remained silent while just staring at me.

The coworker is a super friendly guy who would do anything to help anyone and is truly really smart with electronics and gadgets. His speech is off, kinda like if your tongue was too big for your mouth. So it seemed the customers felt a certain way about this and decided my coworker wasn’t smart enough to help them.

After standing there for what felt like an eternity, I broke the silent stare down and asked if they still wanted help or what? The husband said yes but only from you!

So I asked them what is your question? The husband asked about some specs. I said ya I don’t know the answer, hang on let me ask him. So I looked to my coworker and repeated the question he gave the answer. We both look at the customers, they were angry with their red faces and squinting eyes. I asked if there was anything else you’d like to know that I can ask him for you? They took a moment longer to stare at me while I just stared back smiling my fake smile, they ended up just walking away.

When they left I told my coworker not to let people like that get him down, they are a bunch of ah*l*s. If they come back and give him a hard time come get me.
