One thing I’ve learned as a baker is that you can’t judge a cake by a photo alone. The biggest improvement to this Black Forest Cake isn’t something you can see. Switching to a high-quality Dutch-process cocoa transformed the chocolate sponge and created a better balance with the cherries and whipped cream.
