Home made black sesame ice cream

I’m currently working on a series of ice creams with Japan inspired flavors.

I began with black sesame. the flavour is strong but the texture is super creamy!

I have other flavors lined up for the next batches, with matcha (because of course), sweet potato, yuzu, sakura, anko, kuromitsu kinako. Happy to hear your suggestions!

Bonjour,

Comme le titre l’indique, je souhaite reprendre mes études, et m’orienter vers du droit. Le droit du travail et celui des entreprises m’ayant toujours passionnée, j’aimerais pouvoir en faire quelque chose.

J’ai une licence de langues, je travaille dans le domaine du tourisme et je vis à l’étranger. Je me doute que ma licence n’ayant rien à voir avec le droit je vais devoir reprendre une licence 0.

Je me souviens avoir vu des cursus complètement en ligne, où seuls les examens sont en personne.

Je voulais savoir si certains d’entre vous ont expérimente le fait de reprendre leurs étude après 35 ans, dans quel domaine, et cette réorientation vous a-t-elle servi ensuite?

Want to give furnitures instead of throwing it away

So, I have a few furnitures that i’m planning to replace, because the lifestyle of my family changed and we need to get rid/replace a few things.

My local sodai gomi will treat them as trash if I decide to go through them (yes, I asked), and I don’t have Facebook anymore so mottainai japan is not an option.

I’d love to give to people who need it, so if you need a dining table, a small or bigger desk, a cupboard furnitures for a baby/small kid’s room and you can pick them up in far east Tokyo, or if you know an organization that would be willing to pick them up, I’d be happy to hand them over.

Meringues troubleshooting

I made French meringues and it’s a fail!

But what’s going on here?

They are sticky, too soft, the piping didn’t work correctly.

Ingredients :

4 egg whites (I used the egg yolks in another recipe and didn’t want the whites to go to waste)

120g sugar

a pinch of salt

I fluffed the whites until hard and added the sugar. but I think they were not hard enough.

45 min at 110’ C

I have a very small oven, because the country I live in… So I had to make trees instead of small meringues.

I can’t stop laughing at how ridiculously bad they are

Coffee and dulcey ice-cream

Given what it takes to make an ice cream, it’s almost baking at that point.

1st picture is the current batch of coffee ice cream, 2nd is the dulcey I made last week.

And yep, they are scoopable and super good!

Butter Cookies

I swear they taste better than what they look like.

90g butter

45g sugar

1 egg

120 cake flour (T35 here)

9g chocolate

25 min 160C

I don’t know if it’s the temperature of the oven, or if I should have cooled the batter before piping.

Dulcey vanilla ice cream

Probably the creamiest, richest and tastiest ice cream I’ve made until now. I had to refrain from eating the whole bowl.

I’m still testing the base of the recipe to make sure it work every time so I can’t give you the quantity as of now, but here are the ingredients

I used real vanilla pods for this recipe and a bit of salt to balance with the richness of the chocolate.

-whole milk

-egg yolks

-sugar

-skimmed milk powder

-heavy cream

-dulcey chocolate

- fine salt

-vanilla pods

and that’s it.

Comment faire pour faire disparaître le continent de plastique?

pour faire suite à la plantation sur les arbres : quel moyens technologiques faudrait-il pour récupérer le plastique dans les océans, et qu´en faire? Le recycler coûterait probablement cher, le brûler serait probablement une source d’émissions importante.

y a-t-il des acteurs existants qui se sont penchés sur la question? (startups, ONG, acteurs gouvernementaux etc…)

When do you know your sourdough is ready to use?

i’ve been cultivating my first sourdough ever for the past week. It feels a bit like gardening and i’m enjoying seeing the evolution. It’s made from wholemeal and rye flours, smells good, bubbles nice, but I don’t know if it’s ready, or even what’s the next step to take.

My search on the internet felt overwhelming and confusing.
Si I would love to know if you have any advice for a total beginner, so I keep this mother dough healthy as long as possible.

How aware are you about the climate change and what do you do to reduce your impact.

Europe is undergoing its second heat wave since may, meanwhile Tokyo has quite a chill weather for the season.

But this chill season doesn’t mean summer will not be harsh. It’s getting hotter by the year, and it seems there is no concrete measure in Japan to reduce the impact of the country on the climate.

This makes me wonder how aware are you in general about the global warming, and what do you do to reduce your impact individually and / or collectively.

Je suis guide touristique au Japon, et je me demandais ce qui vous décidait à faire appel aux services d’un guide, ou au contraire ce qui pouvait vous freiner.

Pour le Japon, les gens appréhendent souvent la barrière de la langue, et pour beaucoup de voyageurs que j’ai eu l’occasion d’accompagner, le Japon est le premier pays d’Asie qu’ils visitent.

Why the stores’ shelves looks this empty?

I feel stores’ shelves get emptier by the day, even for products that are made in Japan. Is it only in some areas or is it all across the country?

I understand the shortage comes from the Hormuz strait blockade, the naphta shortage, the garbage bag craze, but I feel I don’t understand fully what’s going on here.

Can someone explain me like I’m 5 why shelves are this empty?
