Travel time for a half-done steak?

Hello Steakers -

I am attending a larger get together this weekend and I wanted to bring a couple tri-tips. Unfortunately, where we are going doesn’t have a smoker or a decent setup to prepare them.

So, I wanted some advice on approach and food safety if I:

- Smoked them to get them up to temp (probably 105-110 ish)
- Wrapped them and traveled for 30 min
- Set up the searing at friends house
- Do a final sear to 120ish then carry over to 130-135.

Total drive time and prep time may be an hour or so where the temp may carry over.

Is there a better approach, any changes, or should I just do it at my place and bring it over beforehand?

Romeo3 Pro (not Max) out?

Hi all -

Looking to see if the Romeo3 Pro (formerly the Max) is out yet?

I'm hearing that Sig is still shipping the Max (as of a couple weeks ago) and wanted to see if anyone has seen or received the Pro. I'm interested in some of the new minor updates to the pro for my P211 (since I wasn't able to get a GT5 with the Pro).

Post Sous Vide pre Sear Process?

Hi all 👋 -

Not new to the sous vide process and what gets the best results for my usual cuts of meat, but I’m struggling a bit with a new infrared searer (big horn on Amazon).

The infrared searer seems great, but I’ve noticed if there is any extra seasonings (pepper, garlic, onion , etc) on the meat after drying them, it just burns and doesn’t give a good sear. I previously used the cast-iron skillet with some beef tallow and coconut oil which seemed to remove enough of the seasoning that it wasn’t noticeable for the sear. But that’s certainly not the case for the infrared searer.

The seasoning isn’t doing anything after sous vide, so what’s the best approach to remove these seasonings and keep it dry before the sear?

I’m about to start experimenting (dry brining a tri tip now), but was curious if you have an approach that you would recommend.

Vudoo Priest thoughts in 2026?

Hi all -

Long time 2011 owner and USPSA shooter (M class) that’s had moved away from the platform due to funds but I’m on my way back!

I’ve had a handful of Atlas, Nighthawks, and MPA (among others) and was a 22NRL shooter when I learned that Vudoo also made 2011s. I’m well aware of the history, VC involvement, move and drama but I’m curious….

Does Vudoo make a decent 2011 in 2026?

How’s quality, consistency, support, etc?
