Roo Burger anyone?
Son got me ground Kangaroo from local butcher. Was a bit dry, with similar flavor and texture of Bison. Pretty good, though if i make it again, I may add some ground porkbelly for more fat.
Served with sliced red potato fries, tossed in olive oil and homemade breadcrumbs then air fried.
