How can I keep the chicken juicy while making arroz con pollo without leaving the rice undercooked?

I’ve been making arroz con pollo with boneless chicken thighs, basmati rice, onions, garlic, bell pepper, broth, and seasoning.

My usual process is:

  1. Season and brown the chicken, then remove it from the pot.
  2. Sauté the vegetables and garlic.
  3. Add 2 cups of rinsed basmati rice and toast it briefly.
  4. Add about 3 cups of chicken broth.
  5. Return the chicken, cover the pot, and cook everything together over low heat.

The flavor is good, but I sometimes end up with either slightly dry chicken or rice that still needs more time. Should I cook the chicken separately and add it near the end, use larger pieces, or adjust the amount of liquid and cooking time?

I’d appreciate advice from anyone who regularly makes one-pot chicken and rice dishes.

What ordinary thing has been making your days a little better lately?

Lately I’ve been noticing that the smallest things often improve my mood more than anything dramatic.

For me, it’s having a quiet cup of coffee before the day really starts. Nothing special, but it gives me a few peaceful minutes to myself.

I’d love to hear what simple, everyday thing has been doing that for you recently.
