Labor's love for gambling industry

Genuine question. Are Labor people ashamed that their party seems so keen to protect an industry that does so much grievous harm to working class people and society generally? That Labor ministers seem so keen to pat themselves on the back as somehow progressive on this issue when it's clear they've only acted due to political pressure and only to the barest possible degree? Or that there is such unanimity of opinion on this legislation with the Coalition?

Is this why people call Labor centrist or centre-right these days?

Genuine question about how people justify this.

Tomme blowing issue

So, as you can see in the photos I have a tomme blowing issue. I changed milk supplier to try and avoid this (new supplier does not feed their cows silage).

At this point I suspect the issue is resulting from a pressing problem.

For this batch the pressing was done using whey drips from the mould as a telltale for correct pressure. 1x 30 minute light press, then 3 x 1 hour press with gradually increasing pressure (increased pressure of press until slow drip of whey appeared from mould then left). Then left it overnight for circa 16 hours at very hard pressure. Temperature overnight probably dropped to around 12c at lowest point. A slight curvature developed in the units after about one month so we were anticipating this before we cut them open.

The batch we made after the batch pictured had a different press schedule does not appear to have any blowing (very flat top and bottom after three months). For that batch we followed the same pressing for the first 3.5 hours but then we left the units overnight in the mould but not under any pressure. The curd surface did not look as smooth but they were well-knitted and seem to have avoided this issue.

All that makes me suspect that we have pressed too hard for too long on the batch pictured, and that keeping a warmer overnight temperature might be a factor too. We did not test for pH, but will do so for our next make (I have seen recipes with a target of 5.4). For next make will follow a much lighter press schedule (including an in-whey pre press) and monitor pH.

By the way, we have a cheese pH tester. To measure the tomme wheels does one insert the probe into the cheese or is it ok to rest it on the outside to get an accurate read?

This doesn't do much for the credibility of the company presenting false information about its rating on the Google Play Store. App Store is 4.2 which closer, but still not 4.4.

Anyone used nsave to send to/withdraw money in Syria?

Hey. Does anyone have direct experience or know someone who uses nsave in order to transfer funds to Syria to withdraw there? I'm considering it as a way to access USD in Syria without carrying lots of physical cash when I visit. The fees seem to be 1% for transfers under US$300, and less for larger transfers. I live in a western country and have applied for an nsave account but want a bit more confidence before trying it out. Thanks in advance.

Best way to get physical USD in Australia before travelling?

Hi. I'm traveling to a country (Syria) where physical USD is king and ATMs can't be relied on. I need to take approx US$6K in physical cash with me when I travel. I am looking for the most effective way to do this in Australia before I travel. I have a Wise card (it does not operate in the country I am travelling to). I am also a customer of one of the major Australian banks. My questions is:

Am I best converting an amount to $USD in Wise, and then withdrawing from an ATM in Australia before I leave?

Using Travelex?

Putting in a foreign currency order with my bank?

Any pointers would be much appreciated.

Dutton family represent US criminality perfectly

I'm not American, but live in a western country allied to the US. I'm currently close to the end of season 3 and it occurred to me that the Dutton family is a perfect representation of the US role in the world. That is: criminal, violent, and dysfunctional, but with a self image as good and the criminality justified as necessary to protect the ranch (state) from bad guys (everyone trying to take their land). Despite all their criminal behaviour, the show presents the characters sympathetically, a bit like how Americans see their own role in the world.

What's your assessment of Clark?

What's the verdict on Clark? He's a high draft pick and there were Selwood comparisons when he was drafted. Now in his fourth year.

Is he what you thought he'd be and what the club expected?

My views are he needed this time to develop his body and learn the Geelong way. He's a tough inside player and runs hard. I think he'll only improve from here. Next year the breakout year I think.

Scott's press conferences and discussion medical issues

Is anyone else getting frustrated by the repetitiveness of Scott's midweek interviews when it comes to him answering questions about the health status of injured players?

He gets asked every week, and gives much the same answer every week. It feels cagey from his side when he pretends he knows nothing and claims it's an invasion of privacy and he's not a medical person etc. On the other the journalists never seem to learn and see it as their role to ask.

Can't we just go back to a situation where the club releases information on injuries separately (Simon Lloyd used to do it) rather than this silly game that gets played each week that make the press conferences really boring?

Where to source large moulds?

Does anyone know where moulds like the (French) ones pictured below can be purchased online? Not necessarily that size but in that style for making larger wheels of cheese like comté. Local cheese supply websites seem to max out at tomme size baskets. Cheers.

Update: Tomme aging - day 17

Posted a while back about a black spot issue. Thanks to the advice here we ceased washing with brine and started brushing instead. Also using a dehumidifier to drop humidity levels in the cave. Latest batch of tomme at day 17 pictured. No more black spot.
