Baked Salmon

~Baked Salmon~
•Salmon
•Spices and Seasonings
•Diced Tomatoes (any type of fresh tomato is good but canned will do in a pinch)
•parsley (optional)
•lemon (fresh sliced or a few tablespoons of lemon juice splashed over)
•minced garlic (fresh or refrigerated. Diced or powdered can work as a substitute)
•Red Onions (or onions, leeks of your preference) sliced (preferably fresh onion but frozen will do)

~Rice~
•Brown or White Rice (Instant or Longgrain)
•Low Sodium Chicken Broth (or water, beef broth)
•seasoning to taste
•sauted thinly sliced green onions (or bell peppers and yellow onions diced)
(Ratios for rice as follows:
-Brown Rice 1 to Liquid 2.5-
-White Rice 2 to Liquid 2-)
Bring rice to boil and cook 20 minutes for white rice and 50-60 minutes for brown rice.

~Asparagus~
Steam. Add green onions and garlic that have been browned in butter or margarine. Salt and pepper to taste. Sprinkle over with parmasan or grated cheese of your choosing.

Naked Cake

My step son said he didn’t like icing very much so I made this cake. I’m not good at decorating cake for sure, so I just used some of his favorite candy. One taste of the homemade cream cheese frosting and he loved it! He said it was his best birthday cake ever which is a win in my book.

Recent plates

Last night we had a friend knock on the door at 9:30 pm. Here’s why we have that happening.. once you try our food, you definitely coming back. My husband can befriend anyone, and I can make a good plate out of anything so people be up in our kitchen any time of day. 😂
Here’s some homemade beef Quesadillas, Guacamole , and a loaded Salad (plate one). Meatloaf, mashed potatoes, airfried okra and cornbread. (Plate two) which one would pick? And what would you want to drink and for dessert?

Our cousin is a pro on the grill.

Do you have that cousin who is always posting about grilling? Well, we do. Unfortunately he lives over an hour away so we don’t get to enjoy it often. This one when he brought the grill to our place. This was just the first plate. I’ll say it again, Imma get right on that diet tomorrow guys. 😂

Eating At Home

I grew up poor enough that I never lunchables . I thought they were for rich people. A while back, my husband and I ate some as we watched tv from bed. Some days, that’s what eating at home looks like: snacks and simple things. Other days I might whip up a plate for dinner with much more. What matters is the love, the sharing and the intimacy.
