Rationale Mexican style brew

It’s warm out so thought I’d try this one …. It looks just like a Mexican lager…. It’s got a decent flavor not bad definitely a hot day non alcoholic beer to enjoy… the carbonation is good …my only thing wish it had more of the maize flavor you get in a Mexican lager…could you tell it’s an na yes…. But does it taste bad,not at all!! It’s decent for sure is there better Mexican lager na out there yes but I enjoy it ..solid 6.8/10 for me….again every one’s different tho

Rationale hazy ipa

I was excited to crack into the rationales and this one did not disappoint at all!!!! Really great head retention has just the right bitterness an ipa should have…. Also good taste with an almost fruit punch like aftertaste …. It’s a tropical ipa for sure and unique in my opinion … out of the three beers I’ve had from rationale ….so far this is my favorite and I would put this in the middle of my top 5 hazy na I have tried so far… it’s solid 9.3-9.5 for me… I’ve yet to have a hazy na with this same after taste reminds me a lot of some of the leaded hazies I had before switching to non alcholic beer

White labs n/a

So I’m gonna try my hand at brewing an na marzen/Oktoberfest beer this weekend ….im gonna mash at 162 … with about a 6.2 pound grain bill 55% Vienna 35% Munich caramunich 7% and meanodin 3% il use tettang hops and hallertau aiming for 13-15% ibu…. FYI biab then il transfer wort to a thoroughly cleaned and sanitized corny keg after wort chilling to 65f … then il pitch the white labs na yeast let it ferment till I hit my final gravity for 2 days in a row … also mention yes il ph during mash and again at flame out obviously chilling a shot glass of wort in an ice bath to test ph…. Both times… and I cold crash in my keezer for a couple days assuming it won’t take long with it being an na and the fact I’m using a spuding valve … and for this I’m gonna use a cut dip tube was gonna use my floating dip tube but it’s on another keg in my keezer with an Irish red I’m gonna bottle up for my friends…. I really want to brew a delicious na beer I’m on a weight loss journey right now and trying to avoid drinking … but want a good Oktoberfest beer I can enjoy after a workout and brewing my full strength beers for my friends to enjoy….. so any way my question is this has any one experienced doing this method and does it sound correct I won’t be bottling any of this beer it’s for me to enjoy

Update on my bock

So today marks day 6 of pulling my bock out of keezer and letting it referment at 72f to clean up the apple/wine taste today that taste has completely disappeared the gravity still sits at 1.014 but it tastes very sweet almost like a malty dessert so I put it back in my keezer at 33f and I hit it with 11psi co2(serving pressure) and am letting it cold crash undisturbed for 3 weeks you guys think that will mellow the sweetness and make this a great bock in a few weeks?

Problem with bock

I brewed a bock by accident starting gravity was 1.066 using pilsner and Munich malt and tettang hops… any way after brewing I put my plastic fermentor into my keezer at 52 pitched two packs of saf34/70 thoroughly sanitized every thing after about 7 days of active fermentation I brought temp up in keezer to 65 for 4 days… from there I closed transferred to purged sanitized corny keg hit it with 30psi co2 for 24 hours then burst it set regulator to 11 psi and cold crashed for about a week…mind you I pulled gravity before closed transferred and it was at about 1.017 but had a really bad apple taste which I figured was all the suspended yeast…but after 8days of cold crashing still had that bad taste so I pulled corny keg and put in a dark room at 72 to referment for 4 days now I pulled another sample with picknick tap …color was a lot darker but still had an apple bite to it… and gravity hit 1.014 so my question is should I let it sit at 72 for a few more days or just put back in the keezer at 33 to recold crash and carbonate…. Or am I screwed any advice would be appreciated
