I’ve always had boiled eggs with my oats, but since I found out about egg white oats, I started making my own version with whole eggs (I’m not a baker and I can’t let the yolks go to waste).

For this meal, I put some oats on the cooker, and added a dash of salt and cinnamon for flavour. Once the oats were cooked, I added two raw eggs and whisked them into the oats on the fire for 3 minutes (this is 3 minutes of continuous whisking, otherwise you’d see the eggs visibly instead of blending with the oats to give a creamy texture). Then I added my soaked chia seeds (1 teaspoon of chia seeds soaked in a little water) and mashed bananas, mixed it up and served into bowls.
Finally, I added 5g of creatine monohydate to a small plate and stirred in some powdered milk and some water. Then I added the slurry to my bowl of oats. My partner loves their oats sweet with extra honey, while I had mine with just the sweetness of the bananas.

It tasted delicious and I can’t wait to hit the gym. It’s back day!💃🏽

Pro Tips: Remember to hydrate well because the combo of creatine and chia seeds would make you really thirsty. Also, a dash of cocoa powder really elevates this meal!

Stages of grief: Anger

I think I’m currently experiencing the anger stage of grief over GoLemon’s (the grocery delivery app) shutdown earlier this month. I’m currently removing the stalks from 2000naira worth of atarodo pepper to prep it for blending, and all I can think is, why GoLemon? Why???

Why would you come and make my life easier then whisk it away from me in a flash? I’m already dreading when I have to make my tomato mix… the deseeding of the Tatashe and Shombo in those quantities 😩😩😩 Also, I’ve still not figured out how to get my cardamom seeds and I’m running out! (The mallams in my area don’t carry that particular spice. I’ve asked several times). Or is it my Okro? Where can I buy 1kg of Okro and specify that I want half grated and half chopped?😩

I’m so upset!!!

Chai! You should have advertised more, run more campaigns, strived harder to get more paying customers and unique strategies to keep the business afloat! I mean, I found out about the app from a random Twitter post, and I don’t recall ever seeing a single ad in my two years of using said app.

I know running a business in Nigeria is not easy, but allow me to rant here because, I mistakenly touched my ear and now it burns😫😫😫.

Anyway, I guess it is what it is. I’ve got to find a new way. Even if this makes no sense to you, please respond with kindness , because it’s really frustrating to rebuild a system you thought you had figured out (I’m referring to my home system of grocery shopping and food prep as I’d get specific items from them to reduce my stress and improve my efficiency in the kitchen).

Egg oats with chia seeds & apples

I recently saw a post here about egg-white oats, so I decided to try it out. However, since I didn’t want to waste the yolks, I whisked the whole eggs into the oatmeal on the stove (which was already cooking with a pinch of salt and cinnamon), then added some soaked chia seeds, served into bowls and topped with milk, half an apple & some honey.

It was so delicious. I also added some cocoa powder to some of it and that tasted nice as well (forgot to take a photo). I’ll definitely be adding this to my rotation.

Naija Catfish Peppersoup Pho

I’ve recently been exploring how to make some Asian dishes using our Nigerian spices and with all the rains this week, I’d really been craving some Peppersoup so I decided to make my Nigerian version of the Vietnamese Pho.

I used catfish to make the Peppersoup using our regular Peppersoup spices (though I added star anise and coriander seeds as I knew they’d pair well with the rest of the spices), then strained it for that clear Pho broth. Prepped the rice noodles and then served it in a bowl topping it with cabbage, carrots, green pepper, spring onions, scent leaves, and the catfish before pouring the hot Peppersoup broth over it.

Everyone loved it, and it certainly gave me that warmth in my belly I was seeking due to the cold weather. It was a perfect meal for an early dinner. 🥘

GoLemon Shutting Down? I just fell to my knees😫

If there’s one app that has really changed the grocery game in Lagos, it is GoLemon! They’ve been my go-to app for almost two years. So when they said they were restructuring operations this July, I’d been patiently waiting for August to place my order. Only for someone to send me a link to an article stating that they’re shutting down operations due to inability to secure more funding.

I’m so sad rn!!!

Running a logistics based business in Nigeria is not easy, but I was really hoping they had hacked it. Their service was top-notch, and I rarely had any complaints. I’d miss the processing services for sure!

Here lies another promising business killed by the unpredictability that is the Nigerian economy. This quote from the online article explains it best:

“While Nigeria’s food and grocery delivery market appears attractive on paper — supported by a growing urban population, increasing smartphone penetration, and rising demand for convenience — the economics remain difficult.
Grocery delivery businesses typically operate on thin margins while contending with high logistics costs, inflation, and customers who remain highly price-sensitive. Those pressures make it difficult for startups to achieve profitability without significant scale or sustained external funding.”

Stir fry Vermicelli Rice noodles with Prawns, Chicken & Scrambled Eggs

For lunch this afternoon, I decided to make a stir fry dish with a pack of vermicelli rice noodles I randomly purchased during my last grocery run to try out.
I used prawns, chicken (cut into small pieces), and scrambled eggs for my protein sources, and carrots, green bell peppers, and spring onions for my veggie options. I think it came out nicely for a first attempt.

Rice & Beans Jollof for Sunday Lunch

For lunch today, I experimented with a different variation of rice and beans Jollof. It’s one of those days where I didn’t want to buy anything extra but just make a dish with whatever I have on hand at home and in the fridge.

First I made a fish broth using fish heads and spices which I used in cooking the dish. I used palm oil, my homemade tomato paste mix, a small amount of crayfish and added chopped Uziza leaves at the end for that extra flavour, garnish, and native feel.

I use minimal oil when cooking so I added a bit of tumeric to help with the color.

The meal was served with boiled eggs. I’d have loved to add some Panla fish to this dish but I didn’t have any available. I think the fish broth helped infuse a nice flavour so I didn’t miss it too much. Everyone loved it though and I will definitely be adding it to the rotation.

Rice and Chicken Peppersoup

Had a craving for Peppersoup yesterday so I made some and served mine with white rice and a banana.

It was such a yummy meal!

S12E2: A lot happened in this episode

Season 12, Episode 2 (Bullseye) really had a lot going on!

The mother that couldn’t recognize her child??? That was heartbreaking. Poor girl!!!

The false accusation storyline in this episode was also one in a line of many that showed the flaws in their investigative process. Mr. Adelson deserved something, but not to die for Erik’s crime.

Speaking of Erik, dude thought he was so smart! Good riddance!

This show really addresses so many sexual crimes and violations in the society. Great job by the Queen Mariska Hargitay and the rest of the crew!
