Those with a saluki Lurcher - did they ever calm down?

We rescued a 1 year old saluki Lurcher recently, the centre told us they were good first time dogs but I’m finding it hard. A lot of his behaviours I assumed were him still decompressing e.g. can’t relax unless crated, howls and screams constantly for attention, jumps about 5 foot in the air on walks if he sees dogs or birds, flinches when people try to stroke him. None of these are a problem for me because I love him but I just wondered which of the behaviours are common for the sensitive breed and which are more likely down to adjustment / age. Keen to hear from other saluki owners. He has about 1 hour walking per day, lots of garden enrichment and sleeps for about 12 hours over 24 hours. Thanks

I know it’s not recommended but… speaking through camera to my dog makes him stop panicking and go to sleep - anyone else?

Would like to hear your thoughts. I know there are ‘strict rules’ in the world of SA training but I’ve recently tried telling my dog to lie down and praised him and he’s gone straight to sleep.

Rescue still won’t sleep or relax outside of his crate after 2 months, and can’t be left home alone without panicking. Please tell me it can get better. His overstimulation is killing me, I just want him to be happy without a cage

Not confident letting 14 month old saluki lurcher off lead, only have a large patio in the garden for him and can only get to a secure dog field once a week for off lead runs. How can I make sure he is satisfied?
