Yeast amount for 36-48 hour cold proof?

Hi,

Looking for recipe advice for the amount of yeast to use when cold proofing for greater than >24 hours, but no more than 48 hours. I really like the taste that is produced with a longer cold ferment and like the blister look on bagels. I’ve used .3%, .375% for yeast, but never under .3%. Upon further research, it seems like .2% is the sweet spot. Can anyone advise? If anyone has any other tips as well, please feel free to add!

Here’s the rest of my recipe
51-52% hydration
3% BMS
1.5% BI
2.5% salt
I use AT flour

Sunday bake

Still having serious issues with my oven. I’m going to have to probably make 3-4 bagels at a time on my steel, as my oven drops temperature too quickly. Otherwise, my recipe is perfect!!! Best bagels I have made thus far

Bagel ovens for home?

Anyone on here buy a separate oven to bake bagels in?

I have a steel that I bake bagels on now. I use boards and flip after 5 minutes. While im happy with the results, sometimes my bagels don’t bake evenly. Any thoughts on a stone, or a separate oven?

What would you do?

I’m a 30 year old F. My husband is 40 year old M. We have an almost 21 month old daughter together. For the last 4 almost 5 years, he’s been in dental school. I’ll preface by mentioning that he is the absolute worst student. It’s quite frustrating to be honest, but there’s nothing I can do.

We were in MA the last 4 years while he attended dental school. We had our daughter during his second year. I’ve considered myself a single mother the last 2 years as he’s been “busy” in dental school. I moved back to FL (where I am originally from) about a month ago because dental school was supposed to end, however he is not done. He told me he’d be done with school by now, but this is not the case. Fortunately, I do have family here that helps sometimes with my daughter, but I usually don’t depend on them as I feel guilty asking my husband’s mother for help. My daughter will be starting daycare/ preschool next week so I’ll get a few days for myself until I start my new job the week after. My husband has always been on the lazy side. I find him very unmotivated 90% of the time. He’s also addicted to playing video games. He’s going through a significant life change, as his dad is very ill with dementia and according to him, he copes by spending 5-6 hours a day playing video games. I’m not buying it, never have.

I want to leave him sooooo badly. Would I be a piece of crap if I did? I’ve been with him for 12 years and he only gets worse with his immaturity and inability to provide for his family. For those that think I am wrong or I should tough it out, I’ve financially supported him for over 11 years and he can’t even do me the solid of finishing dental school on time. He never really helps with our daughter either and doesn’t pay for anything.

Experimental pizza ONLY

I am well aware that a same day pizza dough does not produce the same flavor profile as a 24-72 cold ferment. For experimental purposes only, I went ahead and did a same day dough recipe. Turned out okay. My sauce, cheese and seasonings however tasted fantastic so I’m happy about that. Moving forward, I will never use a same day dough recipe ever again lol, for obvious reasons. This wasn’t terrible, but def not the best pie I’ve had. You of course note the poor digestion as well from the lack of a cold ferment. Side note- had a really hard time getting the crust to brown on this one. I’m sure someone knows why, I’m assuming it’s bc the yeast didn’t have time to do its thing with the sugars in the dough naturally.

6.2/10 for me on this pie.

Revo mixer?

Hi!

Does any one own a Revo mixer? If so, would you be able to provide any feedback on it?

Looking to get the Revo titan 5, as the goal is to eventually get a sun mix when my bagel business picks up. The 7.5 is somewhat over kill for me when the sunmix is actually purchased, and I’d plan to use the 5 as a second source of mixing. Only way I’d get the 7.5 is if anyone on here suggested I do so, or if the 7.5 really is worth the extra money.

I plan on using this mixer to make pizza dough as well and sour dough in the future. Was gunna go with Bosch, but for the Bosch set up I wanted, it’s close to $800 and the Revo is only a couple of hundred dollars more and I’d rather get the spiral mixer and spent the extra money.

E. Faecalis UTI- very atypical symptoms?

Hi, if this is not the correct thread to post my question on please let me know.

this is my 4th time having a uti with E. Faecalis show up on culture. Oddly enough, I never have typical UTI symptoms of burning, urgency or discomfort with this bacteria present on UA. When I get these UTI’s, my only symptoms are abdominal spasms, diarrhea, increased colitis flares and most recently, muscle and joint pain and severe brain fog with dizziness. I used to only get UTI’s from Ecoli, but that went away for many many years.

I went to my pcp today and she had no clue why the symptoms I have with these UTI’s are this way. I know this bacteria is very resistant and impossible to completely eradicate.

Anyone else ever have a UTI with this bacteria and experience these symptoms?

The flour you use REALLY does matter/ make a difference!

This is a very high protein flour used for these bagels. Finally achieved a really nice dough texture after proofing for one hour on RA. Excited to see how these turn out tomorrow morning.

Any one have experience with Bosch mixers?

I am in desperate need of upgrading my mixer, as my KA is no where near capable of making or mixing my bagel dough properly. I plan on starting up a micro bakery in 3-6 months, but for now, I am selling to family and friends and doing 3-4 dozens at a time. When I start making a decent profit, and my volume really goes up, I will purchase a sunmix, but for now, I really need something better than a KA. A lot of people online have suggested a Bosch universal mixer for the time being? Any one have any thoughts or feedback on this mixer?

A few people recommended an Ank, but they seem to really struggle with low hydration doughs, and for $700-$900, I’d rather use that for the sunmix. I’d benefit the most from the Bosch, as I also plan to do pizza dough and cinnamon rolls and other very low hydration doughs.

For the record, I am also moving, and until I do, I’m not buying the spiral mixer, as it is heavy.

Hi, I work in MA but I’m considered a Fl resident since I have a Fl DL and registration. My job is remote and I do travel and live in MA for 1-2 months at a time. I do have an MA address along with FL. I am going back to fl permanently however in 6 weeks and I’m looking to purchase a model Y. Am I able to do an MA pick up, get the MA $3500 state incentive still? I know I need to do a fl registration for the car. I realize it’s unlikely since I have fl registration and a DL but I do have partial MA residency as indicated from my tax filing.
