I've changed my profile's settings at least 5 times now so it only shows some certain things and yet it always reverts back to "hiding all content" after a few days, is there any way to prevent this?

Every time I want to jump off a ramp to do a stunt jump, the game makes the game incredibly slow and changes the camera angle which makes it way less fun. I've tried looking through the settings but I haven't found any options to change this, is there any way to disable this?
