This post was made with the purpose of analizing and interpreting the change in colors in Ken's hair and how it narratively connects as a metaphor of liberation from trauma, nihilism, doubts and lies.
First we start from the start
KURONEKI (Doubts, fear of oneself, reject the inner monster)
As we know, Kaneki used to be just a normal young man, he liked to hang out and eat burgers with his best friend, until the accident that took his innocence and humanity occured, Ken always lived with the toxic idealization that his mom was a role model, and thus adopted her mantra "it's better to let others hurt you than to hurt others" which is why despite having the kagune of one of the strongest Ghouls Kaneki was weak, not because he was weaker than his enemies but because he didn't want to hurt them or loose control, he rejected Rize (his Ghoul side) and held on a tight grip to his humanity at best as he could... Until he no longer could and we go to the next stage.
SHIRONEKI (No more weakness, no more hesitation, no more doubts, in order to save your friends you must embrace your own monster)
After Yamori's torture Ken's hair slowly turns white (in the Manga ofc in the Anime it happens more like an Anime transformation sequence), this is because of the Marie Antoinette Syndrome where a huge amount of harm and stress made Ken grow white hair, but this can also be a symbol of Ken slowly letting go of his inherited mantra, when he has his inner talk to Rize he's actually speaking of the part of him that wants to get rid of his weakness but can't, once he finally accepts his Ghoul side he metaphorically devours himself (the "I am a Ghoul" panel), he gets rid of his mother's teachings, he get rid of his weak side and stops holding back his punches and finally can use the Kagune to its fullest potential beating the ever living crap out of Jason and later Ayato, the white hair symbolizes Ken's realization that in order to be strong to protect those he cares about he needs to get rid of his weakness and humanity.
***KID KURONEKI (***The inner innocent lie)
After being defeated by Arima, Kaneki has a trip to his own memories where he meets a younger still human version of himself, the Kaneki that lived and lost his mom, the little defenseless Kaneki that still held his mom's teachings, Kaneki says that he loves he's mother and is a great person, this is when the lie comes out, Kaneki touches his chin meaning he was lying, once again we see Ken with his black hair in contrast to current Ken's full white hair, because he's once again holding something inside him.
***SASAKI HAISE (***Existentialism, identity crisis, a living lie)
Kaneki looses his memories and identity and then it's taken by Arima and the CCG as Haise Sasaki, a Ghoul hybrid investigator and leader of the Quinx Squad, Kaneki or Haise, now has white hair with black parts growing back, this is a double reference, first to his 2 faces (white for Haise, Black for Kaneki) at first the black part is small and Haise only has flashes or can see hallucinations of Ken, but the more interested he was in knowing his original self and the more he accepts Kaneki (like in the Auction Arc) his black hair grows more, the white part (Haise) is starting to vanish.
***KID SHIRONEKI (***The inner hurtful truth)
During the auction raid arc, Haise faces agaisnt Takizawa and during an inner monologue with Kaneki he meets a young version of himself, this time he has white hair like the one in his hallucinations, this Kaneki tells Haise not to erase him but conveniently left out the part where he wants Haise to dissappear instead, during the Tsukiyama Extermination Arc, Haise meets this Kaneki again and after trying to choke him to death, kid Kaneki makes Haise remember something he hid even when he was Kaneki, the memory of his supposedly good mom beating him for small things, black haired Kaneki held this lie, white haired Kaneki revealed it, the white hair symbolizes the hurtful truth.
KUROI SHINIGAMI (The rebirth, the other self, a resurrected nightmare)
During his battle agaisnt Tsukiyama, Karren and finally Eto herself, Haise has to give up on his life as Haise in order to let Kaneki regain his memories and his life, and thus, Kaneki goes Back in Black, despite having the memories and muscle memory of Ken he's still Haise Sasaki identity wise, the return of the black hair symbolizes the rebirth of Kaneki (remember that Ken's black hair was his natural hair color), the end of Haise and the end of that dream.
SEKIGAN NO Oo~ (The katharsis, peace with oneself and the will to live)
During the battle agaisnt Arima, Kaneki does his final move to free Hinami and die at the hands of Arima, and after almost dying there's one part of him that wants to live, and just like his Ghoul side manifested as Rize, his anti-nihilistic side manifested as Hide, who convinces Kaneki to continue living and search for something that's worth living for (that something being Touka), even if it's isn't stylist he has to LIVE, and thus wins over Arima and it's later named as the new One Eyed King. The white hair symbolizes Kaneki getting rid of his nihilistic and suicidal intentions and striving to find something worth to protect and live for.
Yeah I know I'm cornplatting but I really didn't realize this until now.
It's only the first episode tho, not sure if they'll drop the second one.

And I had to simplify several details in the description, babies being taken away from their family and sent to the Darklands, the realistic approach they took with Jim's dad abandonment, the gray morality of having to kill GummGumms knowing they used to be innocent Trolls that Jim and the others have been trying to protect, the AMOUNT of times they keep reminding Jin he'll die on his work and not sugarcoating the ways someone dies in this universe.
