A light Mediterranean-inspired pasta salad with orzo, chickpeas, artichoke hearts, olives, sun-dried tomatoes, vegan feta, and a fresh lemon basil dressing. Great for meal prep, picnics, or warm-weather lunches.
My daughter created a vegan Mother's Day afternoon tea for me.💐 It was simply wonderful.
Here's what she made: Spinach quiche, assorted finger sandwiches (including eggless egg salad), orange chocolate chip scones, clotted cream, mini chai cakes with vanilla buttercream, and chocolate dipped strawberries. All served with a pot of peach pomegranate herbal tea. Everything was as scrumptious as it looks.
