What is it about Japanese food that draws you in more than other cuisines?

For me, it's the umami present in so many Japanese dishes. It gives food this comforting depth that feels rich without being heavy, and it's often achieved naturally rather than through artificial flavor enhancers

EDIT: I realize “artificial flavor enhancers” probably wasn’t the right wording. I just meant that I love how ingredients like kombu and dried bonito can add so much depth to food on their own. Sorry for the confusion!

Does anyone else love citrus zest? I fell in love with yuzukosho after trying it for the first time. How do you actually use it?

I grew up loving spicy food. Back home, my go-to’s were Lao Gan Ma and Tabasco. But when I moved to Japan, I discovered a Japanese condiment called yuzukosho for the first time.

My first taste was on yakitori at an izakaya, and I fell in love instantly. It’s not crazy spicy, but it’s got a great kick, a nice hint of tartness, and that super fresh yuzu aroma.

After that, I started ordering different brands online and realized it comes in both paste and liquid forms, plus two main types (red and green).

I usually pair the paste with grilled chicken, steak, or baked salmon. I use the liquid version in pasta dishes, or mix it into marinades and cold vegetable salads. It's absolute perfection for the summer!!

Does anyone else love this? How do you actually use it?

Can one condiment save boring weekday lunches?

I cook almost the same food for work lunch every day (pasta/rice, fried eggs, veggies, etc.). Since I want to eat fresh but have limited time in the morning, it would be difficult to cook anything too complex.

I'm wondering can adding different condiments save these simple meals? Any suggestions?
