A 1kg tub of natural low fat yoghurt and 2 punnets of strawberries were reduced with today’s date on in Morrisons supermarket. I chopped the fruit up and added 2 sliced bananas, 40g agave syrup and a tablespoon of lemon juice. Whizzed up and put into tubs and frozen. I also made a bonus bottle of strawberry top syrup!

White bean hummus

I had 400g of canned white beans leftover from making something else. I rinsed them off, added them to my food processor with salt and pepper, 100g natural yoghurt, a tablespoon of lemon juice, 50ml olive oil, a tablespoon of garlic powder and a tablespoon of smoked paprika. After whizzing it all until smooth, I added a tablespoon of warm water and whizzed again. This made 20 portions (in the 2 tablespoon sized Souper Cubes).

Cacao, açai and banana overnight oats

40g old fashioned oats, 150ml almond milk, 50g live yoghurt, tsp chia seeds, tsp flaxseed, tsp açai powder, 10g date syrup and 10g almond butter. Heated next morning in microwave for 2 minutes and topped with banana and cacao nibs. Really delicious!

30cm Bamboo braiser doing the job here. Just took the last of last summer’s raspberries from the freezer to make lots of compote for breakfasts. Perfect for this - and cleans like a dream.

This variation was also lovely.

Half cup old fashioned oats, 1 teaspoon chia, 1 teaspoon milled flaxseed, half cup coconut milk, 1 teaspoon smooth peanut butter, half cup coconut yogurt, 1 tablespoon of date syrup and some cinnamon. Next morning, I added a bit more coconut milk, heated it in the microwave for 1 minute 30 seconds then added homemade apple compote.

So,’ I just cannot get along with overnight oats. They are too thick for me and COLD! My husband loves them though so I wanted to make an effort. I decided to try one without adding any fruit to the original mix so I could microwave it and I love it! Win 🥳

Half cup old fashioned oats, 1 teaspoon chia, 1 teaspoon milled flaxseed, half cup almond milk, 1 teaspoon almond butter, half cup natural yogurt, 1 tablespoon of maple syrup and lots of freshly grated nutmeg. Next morning I added a bit more milk and heated it in the microwave for 1 minute 30 seconds then added homemade peach and apricot compote and some flaked almonds. I am so pleased 😁
