Guided tour for Vatican or Colloseum?

Hi there im staying a total of 3 nights in Florence in late september. Ive got a must see sightseeing which is Uffizi gallery. But the rest ive planned on seeing sm novella perfume, aquaflor, and must eat restaurants. Would slotting cooking class be a magical touch to florence? Or would perfume making class be? Though ive only seen aquaflor one and its out of our budget range (340euro pp).
Please advise whether cooking class in florence would be a good and memorable idea
If so, which classes would take 3-4 hours and can be applicable outside of italy at our own home?
For alternatives, any suggestions on perfume classes?
Hi, we are a couple of 30s traveller going to venice, and would like to seek recommendations from frequent travellers to venice regarding hotel. Our budget is +-150 euro per night staying for 2 nights in venice. Is there an area which would be magical to stay in? And definitely a hotel recommendation for a stay in late september 2026?

I land in Milan, was going to stay in Milan and pick up car there but was thinking twice because of the traffic and ZTL and cause its our first trip to Europe driving. Switched to going straight by train to venice mestre and staying overnight there. Is this a good call or is there an even better call?

Overall question: expert travellers, when looking this itinerary as a whole, is there some tourist trap things that was recommended? Any restaurants that you would swap?
