Dehydration

Hey all good :)

In order to retain the nutritional value/probiotics etc of kimchi dehydrate no higher than 35C, depending if the thickness , approx 12-16 hours.

I allow the kimchi to drain in a colander over night to reduce the water amount. The juice is amazing to add to mayonnaise or dressings or soups even

But if you are looking to make kimchi crisps 52C is your go to. But you lose the nutrients.
