Personally, I have the most fun in the early dungeon. In the lategame, your character is pretty static, you're unlikely to find any gear better than what you have already or any spells you want but haven't already found. In the early game though, a +0 cloak off Yiuf is an upgrade, a stack of poison darts is an answer to an ogre you can't beat in a fair fight. And while it's fun to go all out in an endgame fight and burn a dozen different kinds or resources to clear a Zot lung, it's also fun to Macgyver your way out of a sticky early situation with the handful of consumables you've found and identified.
