1 lb bear/venison 1 inch cubes

potatoes cubed

baby carrots

1 onion however you want it

1.5 cups water

Spices

2 tbsp Oriental turmeric

1 tbsp ground coriander

1 tbsp ground cumin

1 tsp ground fenugreek

1 tsp black pepper

1 tsp ground cinnamon

1/2 tsp ground cardamom

1/2 tsp ground cloves

1/2 tsp cayenne pepper

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/4 tsp ground allspice

Rue

5 tbsp butter

4 tbsp flour

1 tbsp ketchup

1 tsp honey

1 tsp soy sauce

1/2 tsp instant coffee

Salt to taste.

braise bear 35 minutes in the instapot. I sear cubes and deglaze with whatever I have on hand. Beer, wine, water.

Saute potatoes carrots and onion. deglaze with something.

Brown butter and flour

Add spices, stir + instant coffee

Add remaining wet ingredients

Add potatoes, onion, carrots, meat

Stir in water combine everything and simmer till potatoes are tender and sauce thickens. About 30 minutes maybe more on low.

Can add water to thin or thicken with little corn starch and water if not thick enough.

If you can't find fenugreek a couple tsp to tbsp of maple syrup would work. Add with other wet ingredients.

I like Jasmine rice with it. Good with nan bread too.

I'm not super good at writing recipes so add something if I forgot it.

Just a hunter with an interesting photo. I'll explain below.

This camera is on a tree leaning at almost 40° on the bottom, at 9 feet up from the ground. I do it this way to prevent interference from bears. I can't explain how a bear would dangle on the tree in front of my camera and only get this shot. Later it was sending photos with nothing. The tree wasn't swaying. It's a very large tree, and no wind that day. High Cascades near Crater lake national park. Very remote with little human activity in the area. I hike in far. No bear here is that tall either. Fur is going up and down. Has me stumped.

Yeah it's really good. I think it's better than beef. Cheaper too.

Got a couple done. Few more to go. I run a couple 60 inch industrial fans over the piles on the hottest weeks. Be perfect by end of August. Get stacked and relax.
