Brewing advice for a Nestor Lasso
Picked this up from a very good shop in Amsterdam but it's only 150g so I prefer not to waste much on dialing-in. The shop (Elevated Coffee Lab on Van der Helstplein) used an EK43 at 540μm for grind, Origami dripper, water at 96C.. and I forgot to ask about the filter they used. I'm just using an Ode 2 so planned to set it in the 4-5 range (the barista did mention that coarser is better for this bean). Filter will be either Hario bleached or Kalita Wave bleached (unless the shop uses something else I can easily get).
This coffee at the shop was mind-blowing, an excellent way to start the day. Now that I'm back home I'd really like to match that experience so reaching out to r/pourover for advice on brewing a Lasso.
