Paired with a 2019 Leitz GG Riesling - the perfect pairing!
A recommendation to add a splash of the wine to deglaze the pan was the perfect foil to the pecorino, to provide a pleasing balance.
I’ve always defaulted to Carbonara but I’ll definitely be making this again, as it’s easier to eat and not feel overly full!
