How can I improve my booth?

Hi!

So I was pretty successful with this setup in my last state. I think in 2.5 months of shows I brought in about $1800 (edit: $2600!!) and my product is $3. However, I cannot help but feel it just feels sooooooo basic/beginner/minimal and i really want to make it more pro.

I’m also considering applying for a juried event where the vendors are chosen by judges. Feels like I need something better.

I (currently) only sell cake pops. Kids & adults looking at the display ones + my A frame sign totally carry the business lol.

Does anyone have any suggestions? Thank you!!

What to do if I sell out completely at multi-day event and can’t make more product

Hello!

I have a cake pop booth. I did my best to make as many as I could for the full weekend but it turns out 400 was probably a bit low.

The event runs 10am-8:30pm tomorrow so I just can’t make more when I get home if I need more for Sunday again.

If I sell everything planned for tomorrow I won’t have a huge amt for Sunday… may sell out hours before the end of the day.

What do you do if that happens? Sit there til the end so it doesn’t look like you left early (that’s what I did today), but take signs down? Tear down early and notify organizer?

I’m also moving out of state in 2 weeks lol but I don’t want to burn bridges as it’s a large city event and you just never know.

Thank you!!

I met with a dietitian and I’m finding my new “meal plan” so easy/low spoon.

Hello, I just wanted to pass this along. Here’s what I’m supposed to do each meal.

1/4 of the plate- protein of ANY kind
1/4- carbs/grain (ideally complex carbs)
The rest- any fiber. Any fruit or veggie.

We focused on things I don’t have to cook and prepare. So I’ve been doing things like Greek yogurt with granola and berries. Microwave chicken nuggets and cereal plus veggies from a tray. Tuna packet with crackers and a banana.

Even tho I’m supposed to do it 3 meals a day I’m finding it feasible.

I used to just eat a banana or a lot of grapes then wonder why I was still hungry bc at least I was eating something.

I hope this helps anyone:)

Would this rug look weird on this carpet?

I’m moving to MN in a month and debating whether I should bring my rug. I love it and think it’s beautiful. But logistically not sure it’s worth it. I’d be putting it in the living room. Is there a way to put it there that would look good? I know it’s kinda dark in there too.

Thank you!!!

Airtight container for freezing baked items

Hello,

I have a small cake pop business and have a bunch of large multi day festivals coming up. I need to make like 600 cake balls at a time and freeze them until time to dip. I haven’t found a really good, truly airtight freezer bin that effectively prevents ice crystals. Tried some rubber seal ones but they became less effective after several washes.

I didn’t have a ton of luck on webstaurantstore. Could someone point me in the right direction? Thank you!

Good property mgt companies, complexes?

Hello! I’m traveling up next week to tour some places. I looked at a lot of companies including bigos and others. A lot of these places, when I googled reviews they were pretty bad. I’m a bit stressed out- can anyone recommend a good, reliable company?

Needing a 1br anywhere within 20 min of Minneapolis and ideally under $1300 but would go to $1400. I just need a dishwasher and some parking lol, ideally 700+ sf if possible. No issues with older places.

Thank you:)

Utility bills in downtown (or other) high rises

Hello! Does anyone live in a downtown/other type of apartment that does the bill back thing, where they distribute utility amounts based on your apartment size rather than paying for your actual usage?

Basically I’m wondering if it’s really the $70-200 for everything, that’s I’ve been being told on tours (heat, water/sewer, trash, pest control etc).

Thanks for any insight. Trying to figure out budget things.

Is this done?

Hello! This is a half cake mix half brownie mix. I can never tell if that discoloration means it isn’t done. Internal temp is 204-206. Thank you!

Is uptown a decent place to live? Do you like it if you live there?

Hello!!! I’m moving up in September to be with my bf. My heart has been set on a proper downtown apartment (240 park ave) but if they don’t have something by then, I found a complex I like in uptown.

I’ve heard it’s kinda a has-been spot and that’s not like.. a huge issue, but I’m curious if you actually like living there. I have a cake pop business from home and will be spending a lot of time with the bf but also like to get out and traipse around, I’m very extroverted. It doesn’t look too far from downtown.

I’m 34f originally from Atlanta, currently in Lexington KY.

Thank you!!!

What kind of stand do I need for this?

Hello! I am going to be making this display. Not sure the best way to stand it up on the back. It’ll need to be able to withstand some wind. Ideally also collapsible or removable if possible.

What does everyone recommend? Thanks so much :)

Potatoes not cooking well

Hello, for some reason my last few boxes (granted they were everyplate) I had a roasted .5” potato cubes and a potato wedges recipe. Both had issues where they’d still be underdone but taste burnt. Oven is pretty new and very accurate. Has anyone had issues like this?

How do I dowel this?

Hello, I have had a hard time figuring it out. This is 6 and 4 inches. Do I just put 4 dowels to support the 4 inch? Does the 4 inch tier need anything and do the very thick heavy 6 inch layers need additional reinforcement? Thank you!!!

Can’t get carton egg whites to beat to stiff peaks

Hello!

I make my royal icing with egg whites. I can’t get them to beat to stiff peaks tho and I assume it has something to do with the carton whites.

I really want to get it figured out. I’ve always added more powdered sugar to make it more stiff. Has anyone else run into this? Do you have any suggestions?

Recipe is
3 egg whites
1 lb powdered sugar
1 tsp vanilla

(Preppy kitchens recipe)

Thank you!!

Need advice on heating heavy cream for ganache

Hello,

I use this ganache recipe: https://savorthebest.com/white-chocolate-ganache/#wprm-recipe-container-36837

It has this line: “heat the heavy cream until it’s hot and just starting to steam. It should be very warm but not boiling.”

I really struggle with the heating cream until it’s steaming but not boiling. I feel like there’s such a thin margin where it’s fine and then is boiling.

Last time there were small bubbles around the edge but no steam… I was watching and then still no steam but suddenly it appeared to have some boiling type bubbles.

Is there a good foolproof way to know when to pull it? I pulled it off at that point and it didn’t melt the chocolate very well so I’m also wondering if it wasn’t enough.

Thank you!
