





Chicken and slaw
I’ve been craving chicken. Tonight, the fates agreed it was time, but as usual they left me a wrinkle. One of my favorite meals in the world is BBQ’d chicken thighs, conecuh sausage, baked beans and either tater salad or Cole slaw.
I set to work. While the coals were getting ready I replaced one of the spindles on my mower (that I’d already done once but installed it wrong). (This took longer than I thought it would). Finally, I got the mower running right and put my Jeep back in her hole and the mower in hers. Checked the coals and they were a little hot, so I shut the airflow and went to put some string on my wife’s lil electric B&D weedeater.
I got that done and coals and everything was looking ready, so I put the meat on and closed the lid (Chargriller Akorn). Close to finish I started slopping on Stubb’s Sweet Heat for 3 flips, 60 seconds before I slipped and flipped again.
At this point I realized I had no coleslaw, and no cabbage. I didn’t even have lettuce to fake a slaw with. So I raided the cabinet and pulled out one can of each: black beans, corn, artichoke hearts, and whole tomatoes. I chopped up the tomatoes and artichoke hearts, then rinsed it all and diced up a 1/4 of a vidalia onion and half of a bell pepper. I was going to add some ancho chilis I had but I forgot them. I rinsed everything and dried it, then added a tbs of garlic powder, half a tsp of salt and half of pepper, 1 tbsp of cumin (personally this is the one thing I felt I should have left out), and 1 tbsp of oregano. Added in 2 tbsp of Apple cider vinegar and a 1/4 cup of mayo. I mixed it all up and I gotta say it wasn’t half bad.
I cooked up a can of zero sugar Bush’s baked beans and made myself a plate and brother, it hit the spot.
